What's the quickest and tastiest meal you've prepared?

On a busy weeknight, it's hard to cook for hours to prepare a hearty dinner. I'm just looking for thoughts on what others cook to save their sanity during the weekdays but is not utter junk.

Do you like seafood? I bought some shrimp, threw it on a plate, tossed a salad with a little onion, garlic, very little fresh spinache and put that next to the shrimp along with some shrimp sauce(ketchup, horseradish and a dash of sugar) and everyone loved it.

How do you get your recipes, do you just create them yourself. If you do then that's pretty innovative!

I'm glad you like it. I have a ton of recipe's that are simple stuff like that because we are all 'on the go' eaters. I hope it works for you.

I love breakfast for dinner. It's really quick and good for you and you can get all the food groups in there. I'll usually fix eggs or an omelet, some kind of toast, turkey bacon, fruit and if I want veggies in there I'll put them in the omelet. The kids love it. You can make it low fat by using egg whites and it's so quick. Also, you can cook chili in a crockpot during the day or stew and it's done by the time you get home. Another quick thing to fix that's good for you is tacos. You can get the soft and hard taco pack and it comes with the mix. Then you just cook the meat in a skillet and add the mix. It's done in about 20 minutes.

I once had a quick meal with some eggs and cheese. I made it in a hurry and it tasted so good! Unfortunately, I wasn't able to cook something like that again for some reason. =(

That sucks. Do you know if you had to bake it?
