Any vegetarians?

So I'm not a vegetarian, but I've come to realize that I seem to eat less and less meat than I used to. It's not a conscious decision, but I just seem to get grossed out by meat, lately.
My struggle is that I don't love veggies, but I'm trying to work on that! Do any of you have any great recipes that taste great, and fill you up, without meat?
My favorite so far is a couscous recipe with lots of fresh veggies--like corn, cilantro, red peppers, green onions, etc. It's fabulous!

I'm totally with you! I'm not veggie either, but I just don't like meat as much as I used to. And I've noticed that when I eat a lot of meat, I don't feel as good. Maybe it's the cholesterol or something. I don't know.
One of my favorite meatless dishes is black beans and rice. It's often flavored with chicken broth, but doesn't have any actual meat in it (except varieties that come with ham, and I don't like them as much). There are also any variety of pasta dishes that don't have meat. Try looking up a recipe for pasta primavera, which usually has zucchini and summer squash, and a few other assorted vegetables.

Mmm, that sounds good. I'll definitely check it out! You might like the couscous dish I mentioned in my post. It's at www.allrecipes.com. It's called "Black Bean and Couscous Salad" if you search for it. It's amazing, but tastes even better the 2nd day. My only advice is to only use one can of beans. 2 would be a ton!!
Glad to know there's another semi-veggie out there too!

Once you give up meat it will be easier and easier to find vegetarian food. Stay with fresh friuts and vegies you like. I am sure you can find meatless food that you like.

I'm not a vegetarian, but I have cut back on meat too! My husband isn't to happy about it. I have a rice cooker with a steamer. It's great because I buy a couple of bags of frozen veggies and as my rice is cooking my veggies are being steamed. The have some pretty good veggie mixes in the frozen food section.
