My favorite is gouda with tomato and fresh basil. It's so, so good.

Swiss and bacon with just a couple leaves of spinach on wheat cooked in garlicky butter. Day-yum, that sounds good. Your gouda, tomato and basil sounds good, too, mmmmm.

Oh my, did I tell you how much I love bacon? I might have to try that.

I have the same as yours, but with a good buffalo mozzarella. I will have to try it with gouda instead! Either that or I do a croque monsieur type thing - either the traditional combination, or a mozzarella version.

Croque monsieur! Man, why did we make all these food discussions, I'm starving now! I love buffalo mozz, too, but I've never tried it in grilled cheese either.

I find that it has to be a good mozzarella, and it has to be good bread. I first ran across the combination as a grilled italian panini, and found it works well in general as a sandwich. But then, I've always loved that combination - margherita pizzas, that great italian salad whose name escapes me that's just the three ... And yes. I am craving a croque monsieur too now ... and they're awfully hard to make at your cubicle!

I've never tried mozzarella in grilled cheese. I guess I'm a little wary of how it will taste. I don't know why! I've never had a croque monsieur sandwich, but I do think turkey, bacon with cheese makes a yummy grilled cheese. Not too often, though!

Velveeta makes the very best. I also like to have some pickle slices on the side. I also enjoy this with a bowl of campbell's tomato soup or chicken noodle soup.

That is funny, because my Mom likes pickle slices with hers, too, so I've gotten hooked on that. And grilled cheese is the only time I crave Campbell's tomato soup.

Personally i like to use mozzerella cheese with peperonies and grill that the same way you would anything else. I have also found that grilling PB & J is pretty good too.
