CRISPY VEGETABLE PAKORAS
INGREDIENTS
1 cup chickpea flour
1/2 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon ground turmeric
1/2 teaspoon chili powder
1/2 teaspoon garam masala
2 cloves garlic, crushed
3/4 cup water
1 quart oil for deep frying
1/2 head cauliflower florets
2 onions, sliced into rings
DIRECTIONS
Sift the chickpea flour into a medium bowl. Mix in the coriander, salt, turmeric, chili powder, garam masala and garlic.
Make a well in the center of the flower. Gradually pour the water into the well and mix to form a thick, smooth batter.
Over medium high heat in a large, heavy saucepan, heat the oil to 375 degrees F (190 degrees C).
Coat the cauliflower and onions in the batter and fry them in small batches until golden brown, about 4 to 5 minutes. Drain on paper towels before serving.

hmm,im not vegetarian,but i love the veg food also,i will share with you one of my favorites recipes of a vegetarian dish,hope you like it:)
Creamy Spinach Tortellini
INGREDIENTS
1 (9 ounce) package refrigerated cheese tortellini
2 tablespoons Butter
1 small onion, chopped
1 (8 ounce) package cream cheese
1/2 cup grated Parmesan cheese
1/2 cup milk
fresh mushrooms, sliced
1 (10 ounce) package frozen chopped spinach, thawed and drained
cherry tomatoes, halved
DIRECTIONS
Cook tortellini according to package directions.
Heat butter in a large skillet over medium heat. Stir in onion; cook until soft and translucent. Mix in cream cheese, parmesan, milk, mushrooms, and spinach.
Gently mix in tortellini and cherry tomatoes with skillet contents; warm through, and serve.

UNSLOPPY JOES
INGREDIENTS
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
1/2 cup chopped green bell pepper
1 clove garlic, minced
1 (14.5 ounce) can diced tomatoes
1 1/2 tablespoons chili powder
1 tablespoon tomato paste
1 tablespoon distilled white vinegar
1 teaspoon ground black pepper
1 (15 ounce) can kidney beans, drained and rinsed
8 kaiser rolls
DIRECTIONS
Heat olive oil in a large skillet over medium heat. Add onion, celery, carrot, green pepper, and garlic: saute until tender. Stir in tomatoes, chili powder, tomato paste, vinegar, and pepper. Cover, reduce heat, and simmer 10 minutes.
Stir in kidney beans, and cook an additional 5 minutes.
Cut a 1/4 inch slice off the top of each kaiser roll; set aside. Hollow out the center of each roll, leaving about 1/2 inch thick shells; reserve the inside of rolls for other uses.
Spoon bean mixture evenly into rolls and replace tops. Serve immediately

I am not a vegetarian in all honesty. But there are a few vegetarian dishes that I like that I find are to die for. Even if there is not any meat included in the dish. Sometimes a person such as me who isn't a vegetarian.. Wants to sometimes have a dish that doesn't include meat as it is a rather nice change.
I enclosed a recipe that my other half had made for me when we had first started going out years ago. He loves making this dish just to take for lunch sometimes as he finds it's very simple to make.. As well as convenient for when it comes to having to put a lunch together for work. But I know that when he used to make these on a regular basis for me that I just loved them! And still do to this very day.. I hope if you end up trying this dish you find it just as yummy as we do! . .

"Rice, Salsa Tortilla/Enchiladas."
Ingredients are as follows:
- 1 1/2 teaspoon of chili powder
- 1 1/2 cup of thick n chunky salsa. (My other half uses old el paso even though it can be expensive. haha.)
- 1 cup of uncooked instant rice
- 1 can of black beans, drained (Optional though. My other half likes them on his, but he doesn't put any on mine personally)
- 1 can (11 ounces) of progresso whole kernel corn (which has red & green peppers. Undrained though of course)
- 1 1/2 of a cup of shredded cheddar cheese (6 ounces)
- 1 package of flour tortillas for burritos though. (8 tortillas roughly or more)
- Make sure to have additional salsa though. Only if desired. We always use extra though.
Directions are as follows:
- First in a large skillet, heat the 1 1/2 of a cup of salsa, along with the chili powder to a boiling.
- After this stir in the rice, then remove from the heat. Cover this & allow it to stand for five minutes.
- After this stir in the beams (optional), along with the corn & cheese.
- After this spoon about 1/2 of a cup of the rice mixture in to the center of each & every tortilla.
- After this fold the bottom of each tortilla, then fold over the sides. You can use a toothpick to secure them if you want. Serve with salsa. Very yummy indeed! . . xx

Vegan Brownies

"MMMMM...Vegan Brownies!!!! These are very gooey, which is a good thing in my book. However, if you want your brownies a little more solid you'll need to cook them longer than the recommended time. Great for people with egg or dairy allergies too!"
NGREDIENTS
* 2 cups unbleached all-purpose flour
* 2 cups white sugar
* 3/4 cup unsweetened cocoa powder
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1 cup water
* 1 cup vegetable oil
* 1 teaspoon vanilla extract
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in a 9x13 inch baking pan.
3. Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

My favorite is breaded tofu. Well it's not really purely vegetarian as you need to use an egg.
For this recipe you need
tofu (japanese tofu is best)
bread crumbs
flour
dried thyme and basil or any herb you want
cut the tofu in bite-size pieces. coat with flour.
mix the bread crumbs, thyme and basil
dip the coated tofu in egg and roll in the herbed bread crumbs.
Fry until golden brown.
I usually serve this with a salad I made that consist of lettuce,oranges,apples,carrots and tomato.
