Does anyone have any good recipes for chicken enchiladas?

I make mine buy shreading the cooked chicken and adding some of the enchilada sauce to it.Instead of using of oil to soften the corn tortillas I microwave them for a few seconds. You can put anything insidewith the meat and cheese such as onions, green peppers so on. After rolling all I dump the sauce on and add cheese and olives. Back until all cheese is melted.

I use the one on the can of Old Elpaso Green chilie sauce for my chicken enchiladas. My family like it very much and it is so easy to use the canned chili sauce. Shred chicken and add 1 can of Old Elpaso Green chilie sauce add 8oz of cream cheese and mix until the creamed cheese is melted. Add a second can of green chilies. Dip flour tortillas in the another can of green enchiladas chilie sauce. Put the chicken in the tortilla and wrap put in a casserole dish with the open side down. when the Dish is full put the remaining sauce over the enchiladas cover with grated cheese and bake until the cheese is melted serve while still hot. My family loves this. Sometimes I put tofu in ti along with the chicken Good luck with your search.

In my usual easy/lazy cooking way, I have designed this recipe for chicken enchiladas. Sorry, I don't have exact measurements...lol I was trying to eliminate a little fat without frying the tortillas. Cooked cut up chicken Flour tortillas Salsa of your choice Enchilada sauce Shredded cheese Mix cut up chicken, salsa and some cheese in a bowl. Pour a little enchilada sauce in the bottom of a greased baking dish and spread around. Pour sauce on a dinner plate and dip each flour tortilla in enchilada sauce. Fill tortilla with chicken/salsa mixture, roll up and place in baking dish. After filling up the baking dish with rolled tortillas, pour remaining enchilada sauce over all. Sprinkle with shredded cheese. Bake @ 350 for about 35 - 40 minutes or until golden brown. Enjoy!! :)
