I think its the pollen in the middle. Not sure but isnt that what attracts the bees to it?

Maybe some parts of the flower have a natural scent including the leaves.

the center of the flower contains it's cent, it's reproductive center, it's pollen, and it's necter. the petals are nothing but modified leaves designed to attract polinators to it's center. they get pollen all over themselves and carry it to other flowers as they partake in the necter.
