Grilled garden vegetable sandwitches

4 ( 1/4" thick) slices of red onion 1 med. zucchini, cut lengthwise into 1/4 to 1/2 inch thick slices 1/2 small eggplant, peeled, cut into 1/2" thick slices 1 small red bell pepper, halved, seeded 1/2 cup fat free italian salad dressing 8 slices multi grain plain or toasted 3 oz. shredded mozzarella cheese Oil grill rack and heat grill Place onion on grill and cook 2 minutes place zucchini, bell pepper, eggplant on grill, brush veggies with salad dressing. Cover grill for 13 to 15 min. or until veggies are tender, turning once and brushing with dressings. Cut zucchini and bell pepper into bite sized pieces top 4 slices of bread with veggies. Sprinkle each with 3 tbs. of chees. Cover with bread slices. 4 sandwitches

This is one of those things you could do for a gathering of friends. The bread is available and as the vegetables are grilled they become avaiable for guests to build their sandwichs. Keep a variety of add ins on hand and each person can cater to their own tastes. I can see a church fellowshipping going quite grandly during the enjoyment of God's bounty!!

Thank you that really sounds delicious. Normaly I would have said egg plant ?? YUCK -- I recently tried egg plant and love it. It is so testy and I hear it is good for you. Now I could make this and eat 1 maybe 2 sandwiches so this gives me an idea to invite one of my friends over for lunch and make it for them as well. Thanks again for sharing. I love it when people take the time to share their recipes with others.

This sandwich sounds so yummy. We have made veggie sandwiches before but never used the eggplant. I will try it on my next veggie sandwich.
