Chicken Tabbouleh

1 3/4 cups water 1 cup uncooked bulgur 2 cups chopped cooked chicken 1 cup finely chopped parsley 1 tomato, diced 1 (15.5 oz) can garbanzo beans or chick peas drained and rinsed. Dressing: 1/3 cup lemon juice 5 tsp. olive oil 1/2 tes. salt 14 tsp. pepper In med. saucepan, bring water to a boil. Add bulgur, remove saucepan from heat. Let stand 15 min. Meanwhile, in lg. bowl, combine all remaining salad ing. In sm. jar with tight fitting lid, combine all dressing ing. shake until well blended. Stir bulgur into chicken mixture. Add dressing, stir until well coated. Makes 5 survings of 1 1/2 cups each.

A nice variation on the traditional Tabbouleh salad. Another keeper. I love all these healthy ingredients. My printer is smokin' lol
