Making Homemade noodles

I thought i would try to make soem home made noodles and they do not seem to want to get dry enough. What am I doing wrong or am I . It has been years since I have made noodles so I cannot remember for some reason.

By noodles, do you mean pasta? I was always told that when making home made pasta, you add as much flour as the dough will take. This means on more humid days, you would just end up working more flour in as you knead the dough. then you just stop when the dough is at teh right consistancy.

Oh, you mean drying the noodles out later! There are a few methods. However, you can cook fresh pasta that is not dried. It is dried more or less for storage. My parents would hang it over pasta racks (or you could use a laundry rack). This lets air get all around the pasta.

Is the humidity high. I know that that will slow down the drying time. Try puttting them in the oven with just the piolet light on ifyou have a gas range.

Making noodles is fun and easy once you get the hang of it. You must get to noodle shape, then you can coat them in a bit of flour. They are easily cookable right then and there, they are fresh pasta. For drier pasta, my Mom would hang hers to dry. If you seek dryer then put them coated with flour on a cookie sheet in a warm oven to dry. Or use a dehydrator. Hope that this helps you!!

I've never made noodles myself, but I know about people letting them dry for quite a long time, like an hour or two, over the counter.
