What and why the Prince of Wales surname?

I was watching a TV documentary about the Royal famiy and I am curious as to why Prince's Harry and William go by the last name Wales and the Queen goes by the last name of Windsor?
Is that because their Father is the the Prince of Wales?
I am curious.
