Breaded Artichoke Hearts - Seeking Recipes

I've discovered the taste sensation that is herb breaded artichoke hearts. I tried an appetizer sampler last night at dinner, and one of the appetizers to sample was lightly breaded, herb seasoned artichoke hearts. It was divine. I've never much liked artichoke hearts plain, but breaded and fried? Delectable! Now I know what to do when I have artichokes and eat all the leaves. ;) Anyone have any good recipes for these little nuggets of taste?

1 can quartered artichoke hearts, drained 1 egg, beaten until frothy 3/4 cup seasoned bread crumbs salt and pepper Oil for frying-I use olive oil I thing the recipe calls for sunflower oil) Drain and season artichoke hearts with salt and pepper While working, heat oil over fairly high heat. Dredge artichokes in egg and then bread crumbs. Deep fry about 3-4 minutes, turning frequently, or until golden. Drain on a paper towels and serve with lemon wedges (If using fresh artichoke hearts,soak in lemon water, to avoid oxidation.) This is a easy and fast recipe and pretty darn tasty..enjoy :)

I also prefer olive oil. I never use any other oil.

I have never heard of this and am much too lazy to look up a recipe. I will read your comments first to see if anyone else has one. This is much the same as I feel about fried pickles ~Donna
