This is a great way to make lentils more interesting.

I'll sometimes mix other kinds of beans with the lentils, like from an Indian grocery store, yellow split mung beans, or something different like that. I soak them a little, about 3/4 cup, and then I'll sautee a half a tomatoe, maybe some squash, and I'll drain the beans, and sautee them also. Oh, before I do all that, I'll sautee some spices, like cumin seeds, coriander seeds, some garlic and ginger. Then I'll add the beans and some vegis, and then I'll add about 7 cups of water, bring to a boil, and cook the beans for about 45 minutes or so. I like to use the garam masala, too, and fresh cilantro. When the beans are soft, I take some of the slightly cooled cooked beans and I'll blend them in a blender, and then put that back into the soup. I like to add a little lemon juice, too. It's so yummy.

Monastery Lentils
Those monks know their stuff! The sherry makes this wonderful - don't leave it out! I like this best with Parmesan on top, but cheddar is awfully good too. Serve with crusty bread for a hearty, meatless meal.

Change to: servings US Metric
1/4 cup olive oil
2 large onions, chopped
1 carrot, chopped
1/2 teaspoon dried thyme (or more)
1/2 teaspoon dried marjoram (or more)
3 cups beef stock or chicken stock (or vegetarian stock)
1 cup dry lentils, washed and sorted
salt
1/4 cup chopped fresh parsley (optional)
1 lb canned tomatoes
1/4 cup dry sherry
grated parmesan cheese or cheddar cheese or swiss cheese, to top

In a large pot, saute the carrot and onions 3-5 minutes in the olive oil.
Add and saute one minute more: thyme and marjoram.
Add the stock, lentils, salt, parsley, and tomatoes.
Bring to boil, then cover and reduce heat.
Let cook until lentils are tender (about 35-45 minutes).
Add the sherry and allow to cook for just a few minutes more.
Top with cheese to serve.
