Corn fritters

2 eggs separated 2 tbs. flour 1 tbs. sugar 2 cups grated fresh corn Beat the egg yolks and add the flour, 1 tsp. salt and a little pepper. Add the corn and fold in the stiffly beaten egg whites. Drop small spoonfuls on greased griddle or frying pan. Do not cook too fast.

try this :-) 3 eggs beaten, 2 cups crushed corn 2 tablespoon milk i tsp. baking powder 1 tbsp melted buttr 1/2 tsp salt 1/2 tsp pepper 1.1/2 c.flour approximately oil for deep frying mix together corn , beaten egg, milk, melted butter, baking powder, salt and pepper, adding just enough flour to hold fritters together . drop by tablespoons in hot oil and cook for 3-5 min. drain on paper towels.

with this recipe I fry corn I eliminate the eggs, if you use egg I will bake it and we call It corn pudding.

I always wondered how you make corn fritters. I will tey them I like fresh corn I can make a meal out of it. I will try that reciepe.

Ok, i use corn from a can but I really like to use fresh ingreidents.

You can use drained corn from the can and mix it with flour and one egg, sugar, and that will work too.

I love corn fritters. My mum used to make them with chopped up left over meat added. We used to eat them Sunday nights as a quick weekend dinner.
