here are some recipes Mushroom Stew I adapted this recipe from one I found in a cooking magazine called Mary Dee's. You could add cooked meat to this if you wanted to, but it is very good as is. When I bring this stew to work for lunch, the garlic guarantees popularity ALL afternoon! by KeyWee| 1 lb fresh white mushrooms (trimmed & sliced) 8 fresh roma tomatoes (, chopped) 1 medium onion (sliced) 4 cloves garlic (crushed) 1/2 teaspoon red pepper flakes 1 1/2 cups chicken broth or vegetable broth 1 (15 ounce) can tomato sauce 1 teaspoon salt 1/2 teaspoon black pepper 1 cup rotini pasta 1 (15 ounce) can garbanzo beans (drained) In large soup pot, combine mushrooms, tomatoes, onion, garlic, red pepper, broth, and tomato sauce. Bring to a boil. Reduce heat and simmer, loosely covered, for 20 minutes. Turn heat to high, uncover and cook until sauce is slightly thickened, about 10 minutes. Season with salt& pepper. In another pan, cook pasta until tender. Drain pasta and add to stew along with beans. Mix gently and serve hot. here is another recipe Mushroom Chicken I like this recipe because it is easy to make, and it warms the house up on a cold night! by Tarah| 5 servings 1½ hours 10 min prep 1 kg chicken pieces, lightly fried in margarine or oil 1 packet cream of onion soup 1 can mushroom soup 1 1/2 cups water Mix cream of onion soup with the water and add the mushroom soup. Pour over chicken pieces in casserole. Cover and bake for 75 minutes in a moderate oven. Lift off lid for last ten minutes of cooking time. here is another recipe Mushroom Lasagna If the pasta sauce is meatless this is a vegetarian dish! It can be a lunch or a main course for a dinner. I have had no complaints when I've served it. by Tebo| 8 servings 1½ hours 30 min prep 12 lasagna noodles 2 teaspoons vegetable oil 1 onion, finely chopped (try a red onion) 2 cloves garlic, minced 1 1/2 lbs mushrooms (assorted or plain mushrooms, try cremini, shiitake, brown, button etc) 1 1/2 cups chunky pasta sauce, any flavour 1/2 cup grated asiago cheese (or what you like) Cook lasagna according to directions. Heat oil in skillet; saute vegetables until tender (about 10 minutes). Stir in pasta sauce and heat through. Spread thin layer of sauce in 13" X 9" dish. Top with 3 noodles, then 2 Tbs cheese& some sauce. Repeat layers twice. Cover with remaining noodles, sauce and cheese. Bake covered at 350 for 40 minutes. Let stand 10 minutes before serving. hope you liked it here is some information on mushrooms A mushroom is an above-ground fruiting body (that is, a spore-producing structure) of a fungus having a shaft and a cap. By extension, mushroom also designates the entire fungus producing the fruiting body of such appearance, the fungus consisting of a network (called the mycelium) of filaments or hyphae. In an even broader sense, mushroom is applied to any visible fungus, or especially the fruiting body of any fungus, with the mycelium usually hidden under bark, ground, rotten wood, leaves, and other surface matter. Edible mushrooms Main articles: Edible mushrooms and Mushroom hunting Edible mushrooms are used extensively in cooking, in many cuisines (notably Chinese, European and Japanese). Though commonly thought to contain little nutritional value, many varieties of mushrooms are high in fiber and protein, and provide vitamins such as thiamine (B1), riboflavin (B2), niacin (B3), biotin (B7), cobalamins (B12) and ascorbic acid (C), as well as minerals, including iron, selenium, potassium and phosphorus. However, a number of species of mushrooms are poisonous, and although some may resemble edible varieties, eating them could be fatal. Eating mushrooms gathered in the wild can be risky and a practice not to be undertaken by individuals not knowledgeable in mushroom identification. The problem is that separating edible from poisonous species depends upon the application of only a few easily recognizable traits. People who collect mushrooms for consumption are known as mycophagists, and the act of collecting them for such is known as mushroom hunting, or simply "mushrooming". Toxic mushrooms Of central interest with respect to chemical properties of mushrooms is the fact that many species produce secondary metabolites that render them toxic, mind-altering, or even bioluminescent. Toxicity likely plays a role in protecting the function of the basidiocarp: the mycelium has expended considerable energy and protoplasmic material to develop a structure to efficiently distribute its spores. One defense against consumption and premature destruction is the evolution of chemicals that render the mushroom inedible, either causing the consumer to vomit (see emetics) the meal or avoid consumption altogether.
