Does anyone have a recipe for soft peanut brittle?

We used to live in Silverdale, WA, and we went to the Bite of Seattle and bought soft peanut brittle at one of the booths. It was awesome! Does anyone have a recipe for it?

try it my friend: Ingredients: 2 cups Creamy peanut butter 1 1/2 cup Sugar 1 1/2 cup Light corn syrup 1/4 cup Water 2 teaspoons Water; divided 2 tablespoons Butter 2 cups Peanuts; raw or roasted 1 teaspoon Baking soda 1 teaspoon Vanilla Directions: In a double boiler over hot water, place peanut butter to heat while preparing syrup. In a large saucepan combine sugar, corn syrup and 1/4 cups water. Cook over high heat to 275 deg. on candy therm. Lower heat to med, add butter, stirring until melted. Add peanuts, cook stirring for about 5 minutes until candy starts turning brown and reaches 300 deg. on therm. Remove from heat, stir in baking soda that has been dissolved in the 2 tsps water. Add vanilla. Working quickly, fold in warm peanut butter, stirring gently. At once, pour candy mixture onto well greased marble slab or cookie sheet. Quickly spread as thin as possible. The secret of the candy is quick cooling. When cold, break into serving size portions. This recipe for Soft Peanut Brittle serves/makes 3 lbs.

Peanut Brittle - THis looks so good. It makes me hungry.
THis sounds great. I have never heard of soft peanut brittle. I can't wait to try these recipes. Thanks for everyone who posted these.

try this: Peanut Brittle INGREDIENTS * 1 cup raw Spanish peanuts * 1 cup white sugar * 1/2 cup light corn syrup * 1/2 cup water * 1 teaspoon baking soda DIRECTIONS 1. Lay out several sheets of foil to spoon the hot peanut brittle onto. 2. In a large skillet mix the sugar, syrup, and water together. Cook at a medium-high heat, stirring regularly. Heat until the mixture has a hard ball consistency. Heat to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball. If you don't own a candy thermometer, occasionally hold spoon above mixture, allowing it to drip off spoon. When mixture is at hard ball stage, it will 'hair' off the spoon when falling, looking like a clear spider web. 3. Once mixture is at hard ball consistency, add raw peanuts. (They will pop a little.) When mixture starts to turn a light clear-brown, as if it's starting to burn, remove from stove. Add soda and stir. Mixture will foam up. 4. Spoon out bite-size pieces onto unbuttered foil, stirring constantly between each couple of pieces. Mixture can also be poured onto unbuttered foil as one big piece and broken into smaller pieces once cooled. ================================================================= Peanut Brittle Bars INGREDIENTS * 1 1/2 cups all-purpose flour * 1/2 cup whole wheat flour * 1 cup packed brown sugar * 1 teaspoon baking soda * 1/4 teaspoon salt * 1 cup cold butter or margarine * TOPPING: * 2 cups salted peanuts * 1 cup milk chocolate chips * 1 (12 ounce) jar caramel ice cream topping * 3 tablespoons all-purpose flour DIRECTIONS 1. In a large bowl, combine flours, brown sugar, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Pat into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees F for 10-12 minutes or until golden brown. 2. Sprinkle peanuts and chocolate chips over warm crust. Combine caramel topping and flour; drizzle over top. Bake 12-16 minutes longer or until golden brown and bubbly. Cool on a wire rack. Cut into squares. ================================================================= Mock Peanut Brittle INGREDIENTS * 1 cup light corn syrup * 1 cup white sugar * 1 cup peanut butter * 8 cups cornflakes cereal DIRECTIONS 1. Grease one 9x13 inch baking pan. 2. Combine the corn syrup with the sugar and cook, stirring constantly over medium high heat. Once sugar has dissolved stir in the peanut butter. Pour mixture over cornflakes and stir to coat. Spread mixture into the prepared pan and let cool. happy cooking!!!!

here are some recipes for you Peanut Brittle This is the best peanut brittle ever. It does take some time to make but it's worth it. by Kannwilson | 70 pieces 50 min 10 min prep Change to: pieces US Metric 1 1/2 teaspoons baking soda 1 teaspoon water 1 teaspoon vanilla 1 1/2 cups sugar 1 cup water 1 cup light corn syrup 3 tablespoons margarine or butter 1 lb shelled unroasted peanuts Butter 2 cookie sheets, 15 1/2 x 12 inches; keep warm. Mix baking soda, 1 tsp water and the vanilla; set aside. mix sugar, 1 cup water and the corn syrup in a 3 quart saucepan. Cook over medium heat, stirring occasionally, to 240 degrees F on candy thermometer. Stir in margarine and peanuts. Cook, stirring constantly to 300 degrees F. Watch carefully so it doesn't burn. Remove from heat immediately; stir in baking soda mixture. Pour half of the candy mixture on each cookie sheet and spread quickly until it is about 1/4 inch thick. Cool and break into pieces. here is another recipe for you Microwave Peanut Brittle Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your mircowave is less you will need to increase your cooking time. Since most people have the ingredients in their pantry and freezers, it is a recipe that can be made up in a few minutes if unexpected guest show up. by Jellyqueen | 8 oz. 17 min 5 min prep Change to: oz. US Metric 1 cup sugar 1/2 cup white Karo 1 dash salt 1 cup shelled raw peanuts (pecans, walnuts, sunflower seed, etc.) 1 tablespoon margarine 1 1/2 teaspoons baking soda 1 teaspoon vanilla Combine sugar, salt and Karo in a 3 quart microwave safe glass bowl. Stir in peanuts. Microwave on high until light brown (8 to 10 minutes) stirring at least 2 times during cooking. Remove from microwave and stir in remaining ingredients adding baking soda last (mix will be foamy). Stir quickly and pour onto wax paper. Spread thin for brittle candy.
