Traditional Scottish Recipes ...Drop Scones/Scotch Pancakes

As it is pancake Tuesdaythis week I thought you might like a Scottish traditional pancake recipe Ingredients: 8 oz plain flour, salt, level teaspoon of cream of tartar, level teaspoon of bicarbonate of soda, 5 teaspoons of caster sugar, standard egg and a quarter pint of milk. Method: Heat a girdle or heavy based frying pan and lightly grease. Sift flour, salt, cream of tartar and bicarbonate of soda together and mix in the caster sugar. Create a well in the centre and add the egg and some of the milk. Slowly mix the flour into the egg and milk, adding more milk as you go, until you have a mixture which has the consistency of thick batter. Drop a small amount of batter onto the greased girdle or pan - bubbles should rise to the top in a few seconds, if it is the right temperature. Drop in enough mixture to make individual small scones. When the underside is brown (and bubbles are bursting on the top) turn over and cook the other side. You may need to regrease the pan after each batch. Serve warm with butter and honey or jam/jelly. Or try buttering them and sprinkling with light brown sugar!

I absolutely love shortbread! Yum, shortbread, double yum, Scottish shortbread :o) We usually buy our shortbread at the supermarket, we get extra in at Christmas time. We love baking things as a family, cookies, muffins, cakes, buns, etc but we have never tried to make our own shortbread, I think it's time we start! I'll let you know how they turn out when we make them :o) Who would have thought that something with such a simple method and recipe could taste so delicious. Thank you so much for the recipe, very much appreciated! Just one little question for you though................ We have a fan assisted oven, it cooks things a little faster then conventional ovens. Is there a reduced cooking time that you would recommend in this case?

Oh dear, I tried to respond to one of your recipes earlier but there was a system upgrade when I submitted, so I couldn't reply at that time. However I came back to respond but now i've put it on the wrong recipe, it was meant for the traditional Scottish shortbread ....... doh! I think it's time I went to bed and refresh my brain ......... lol

fan assisted is SOMETIMES a we bit quicker just keep your eye on it , it usually goes a kind of pale gold , It really is a case of test and try , it doesn't burn too quickly so you should be fine really . let us know how you get on with it , it will help others in the same circumstances xx

Wow Weemam, this is fantastic what you have put into your discussions today I really love scones, and I am very good at it and this is making my mouth water just reading your discussion so thank you very much I will keep this recipe for my family to experience these Scottish scones and pancakes.

Sounds yummy! In the winter we've been having pancakes at least once a week on the weekends (when I have more time), and for dinner every couple of weeks. It's a good hearty filling meal. :o)
