Any easy pie recipes out there?

I have a sweet tooth. I don't know about you but i'm looking for pie and muffin recipes that's easy to do and don't make a mess in my kitchen. The ready mixes are okay but i'm sure doing it myself from scratch will taste even better. Apple crumble, blueberry muffins, apple pies, peach pies, etc... Please share with me the secrets that make a pie crust good to eat even on its own. My craving is bad *LOL*.
