This recipe comes from Better Homes and Garden Canning Cookbook. I have made it before and so has my daughter. She even made a special batch leaving out the sugar for diabetics and gave it as a Christmas present.
Hope it is the recipe that you are looking for. You could adjust the spices to suit your taste. I don't have a food mill so I pealed my apples then cooked them and mashed them with a masher in the pot then continued with the cooking instructions.
Apple Butter
6 pounds tart apples 6 cups cider or apple juice. Core and quarter unpeeled apples. In 4 to 6 quart kettle or Dutch oven combine apples and cider. Cook till soft, about 30 minutes. Press through food mill. Boil gently 30 minutes; stir occasionally. Add 3 cups sugar 2 teaspoons ground cinnamon and 1/2 teaspoon ground cloves. Cook and stir over low heat till sugar dissolves. Boil gently, stirring frequently, till of desired thickness. Carefully ladle the hot butter into hot jars, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath (half-pints) 10 minutes. Makes 8 half-pints.

Hi Christmas2006, I remember when you first started, along with me, and you gave me this recipe how to bake some homemade Rolls. I copied it, and I still have it.

Hi I haven't been on very much. I started working full time and am extremly busy now. Love my job. Was happy to hear from you. I was reading through some of the comments about the apple butter and want to let you know that you can use apple butter in any receipe that calls for applesauce.

I never tried to make it, but i will buy it out of the store, I like it, It is very good.
