Recipe To Warm You On Those Cold Days - Crock Pot Veggie Kielbasa Soup

I love to make crock pot foods for my husband to eat. He has to pack a cold lunch and he often takes foods that I have made in the crock pot to keep from having to eat sandwiches all the time. This recip is too hot for me to eat, when I use the red pepper flakes but my husband loves it. So I just omit the red pepper flakes if I am going to be eating it. I have an ulcer and reflux so I have to watch and not eat any spicy food. My Granddaughter even like this and she is only four years old. Enjoy Crock Pot Veggie Kielbasa Soup 1/2 lb. reduced-fat smoked turkey kielbasa, sliced 1 medium onion, chopped 1 medium green bell pepper, chopped 1 celery rib with leaves, thinly sliced 4 garlic cloves, minced 2 cans (14-1/2 oz. ea.) reduced sodium chicken broth 1 can (15-1/2 oz.) great northern beans, rinsed and drained 1 can (14-1/2 oz.) stewed tomatoes, cut up, undrained 1 small zucchini, sliced 1 medium carrot, peeled and shredded 1 TB dried parsley flakes 1/4 tsp. crushed red pepper flakes 1/4 tsp. ground black pepper In a nonstick skillet, sauté kielbasa over medium heat until lightly browned. Add the onion, green pepper, celery and garlic. Sauté and stir for 5 minutes or until vegetables are tender. Transfer to a crock pot/slow cooker. Stir in the remaining ingredients. Cover and cook on LOW heat setting for 8 to 9 hours. Yield: 5 servings.

Oh this sounds wonderful. Being of german descent, my hubby loves kielbasa! We buy the healthy choice type that is lower in fat. I normally just use it in a red bean and rice mixture but this sounds wonderful! Copied/pasted/saved!

Yes, I couldn't live without my crockpot! Sometimes on Sunday afternoons we have two of them 'fired up' making things for the following week. I know that when I come home from work I won't feel like cooking so I do a lot on Sunday afternoon! Thanks for the best response!

THis sounds like something that Hubby would actually eat! He loves kielbasa and soup too. I love bean soup. It is my overall favorite.

I, too, love crockpot foods! So easy to prepare in the morning and then you get that wonderful smell all thru your house all day! I even cook in the crockpot all year round...not just winter. This sounds wonderful. I will have to try it. thank you
