Ingredients 3 cups chopped spinach 2 large onions chopped fine 2 large potatoes boiled and peeled 1 tomato grated 2 green chillies 1" piece ginger 1 tsp lemon juice 1/2 tsp wheat or other flour 1 tsp red chilli powder 1 tsp cinnamon-clove powder 1/2 tsp turmeric powder 1/2 tsp cumin seeds 2 pinches asafoetida 1/2 tsp garam masala 1/2 tbsp butter 4 tbsp ghee salt to taste Method Put the washed spinach in a pan, add very little water(just a sprinkle) and a pinch of salt cover and boil over a high glame for 2 minutes. Cool quickly, or hold under running water in colander. Put in mixie, add green chilli and run for a munite. Keep slightly coarse, do not make verysmooth keep aside. Cut the potatoes into big pieces. Heat ghee(OIL) and fry potatoes till light. Drain the potatoes, keep aside. In the same hot ghee add the cumin seeds Add the ginger, onions and fry till very tender. Add the tomato and further fry for two minutes. Add all the dry masalas and fry til ghee seperates. Add spinach and potatoes. When it resumes a boil sprinkle the flour and stir well. Boil for 2-3 minutes. Add lemon juice. Just before serving heat butter in a tiny saucepan and add the asafoetida. Pour over the vegetable and mix gently. Serve hot with naam and parathas or even rice. Note:- You may use boiled peas, boilded corn kernels or Paneer chunks in the above dish, instead to potatoes. Making time 45 minutes Makes for 6 Shelf life: Best fresh

hi i will surely try it and tell you here is another recipe for you Aaloo Mattar ( Indian-Style Peas and Potatoes) This is a very simple recipe. I still thought about posting this because, the base of this recipe ( point where you add peas and potatoes)can be used to cook almost any vegetable curry - potatoes, spinach, cauliflower, capsicum, mushrooms etc. Another variation of this recipe is to use tomato puree instead of chopped tomatoes by Sana| 1 1/2 cups peas, boiled 1 cup diced potatoes, boiled 1 cup tomatoes, chopped 1/2 cup onions, chopped finely 1/2 tablespoon ginger paste 1/2 tablespoon garlic paste 2 green chilies, chopped 1/2 teaspoon turmeric powder 1/2 teaspoon cumin powder 1 teaspoon coriander powder 1 teaspoon garam masala 1 teaspoon vegetable oil 1/2 cup water 1 tablespoon cilantro, chopped salt, to taste Heat the oil in a pan. Add the ginger,garlic, onions, chillies and tomatoes. Saute till the tomatoes and onions are softened. Add the turmeric powder, coriander powder, cumin powder and garam masala. Add salt to taste. Add the boiled peas and potatoes. Add the chopped cilantro. Add the water and bring to a simmer. Serve with Indian Bread or Rice. Tip: I microwave frozen peas and potatoes for about 10 minutes in my microwave. hope you liked it

one more i hv to tell you, Its Mushrooms Takatak : a very simple and easy recipe and im confident that you can make anyone flat by this dish. In this we take a pack of mushrooms(150gms) chopped as small slices, onions 4 - chopped, tomatoes 4 -chopped, curd 200 gms, saunf 50 gms powder, meat masala -MDH, green chilly 4 - chopped,green peas 200gms garlic 8-10 folks and pasted with ginger 1" long, green coriender chopped for garnishing, oil 100ml, and salt to taste, red color. Now take a pan and cook oil till it heatup properly, add ginger and garlic paste cook till it turns brown, add onion cook till turn brown, add red powder and chopped tomatoes, add saunf powder, and stir well till cooking properly, add curd mixed in mixie properly, stir well and heat it up and stir again till it start leaving oil in pan, now add mushrooms and peas with chillies choppped and heat it up after adding up some water. give it a steam for 10 min till peas get cooked properly. surve it after garnishing chopped corriender, best to take chapaties. Making time - 20 minutes enough for 4-5 people. Try it and let me know
