Lavender Cookies

1 cup butter
1/2 cup sugar
a dash of salt
2 cups flour
lavender sugar ( see below)
Cream the butter and sugar together. Add the salt and flour. Mix with wooden spoon thoroughly. Chill the dough in fridge.
Preheat oven to 350F.
Form dough into small balls and roll in the sugar mix. Place on ungreased cookie sheets and bake 10 to 12 minutes.
Cool on racks.
Lavender Sugar
Mix a cup of dried lavender blossoms with a cup of sugar. Keep mixing as you use, because it tends to separate while it sits.

Lavender Cookies
Soothing cookies!

Change to: cookies US Metric
2 eggs
1/2 cup butter
1/2 teaspoon vanilla
1 cup sugar
1 teaspoon lavender flowers
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
confectioners' sugar
rose water
3-5 drops red food coloring, to make icing pink
Preheat the oven to 375 degrees.
Put eggs, butter, sugar, vanilla, and lavender into blender and run on low until well mixed.
Sift flour, baking powder and salt into a mixing bowl.
Add other ingredients and stir until well blended.
Drop dough a teaspoon at a time onto ungreased cookie sheets.
Bake until lightly browned for 8 minutes.
Blend enough rosewater,red food coloring into the confectioners sugar to make a smooth frosting.
Ice the cookies and let them set until frosting is firm.

These sound so heavenly to make for spring! I had never heard of lavender in recipes untuil Rocco DiSpiritos cookbook-- he made a lavender creme brulee.

I never heard of lavender sugar!!!!!! Must be very tasty and interesting taste. Thanks for the tip. I will try these cookies for sure:)

I've been looking for this recipe for ages thank you! I love lavender and have always wanted to make biscuits from it. Sounds like you need a lot of lavender though, don't know if I'll even grow that much.
