I love to have my homemade mixes in the pantry ready to use on a moments notice. I hate commercial mixes because they have additives that I dont want my family to consume.
The first recipe is for the mix. You can store it in a quart jar, in a ziploc bag, or any other airtight container. The mix is better than the commercial mixes but you do not have the pretty package. It is very important to make sure that you include the directions to use when making the scones from the mix. This makes a great gift. I keep them in my pantry all the time. I just use regular chocolate chips cut in half instead of the mini ones
The second recipe is for the family scones. Enjoy and share with someone that you love. I love these scones dipped in butter hunny. Yummy!
Family Scone Mix in a Jar
1-3/4 cup all-purpose flour
1 Tablespoon baking powder
1/2 tsp. salt
1 cup oats (quick or old fashioned)
1/2 cup chopped pecans or walnuts
1/3 cup mini chocolate chips
Mix the flour, baking powder and salt. In a 1-qt. jar layer
ingredients in following order: flour mixture, oats, pecans, mini chocolate chips.
VARIATION: Omit chocolate chips; add 1/2 cup dried cranberries and 1/2 tsp. dried orange peel to mix.
Remember to Attach the following recipe to the jar:
Family Scones
1 jar Family Scone Mix
8 TBSP (1 stick) cold butter or margarine, cut into 8 pieces
1/3 cup honey
1/4 cup milk
1 large egg
Preheat oven to 375. Lightly coat cookie sheet with no-stick cooking spray (or line with parchment paper). Dump the entire contents of the jar into a large mixing bowl. Cut in butter with two knives until mixture resembles coarse crumbs. In a small bowl, beat together honey, milk and egg with a wire whisk or fork. Add to dry ingredients all at once;
stir with fork just until dough starts to hold together. Transfer dough to a floured surface; knead gently 8 to 10 times. Pat dough into an 8-inch circle. Cut into 8 wedges. Place wedges about 1 inch apart on cookie sheet. Bake for 10 to 12 minutes or until light golden brown. Serve warm.
Makes 8 scones.
