More About Beans - Crockpot Ham And Bean Soup

I love cooking with beans and I love using the crockpot. Beans are so healthy and inexpenisive that anyone can afford them. We eat alot beans at our home. There are just so many things that you can do with beans. This recipe is made in the crockpot. You can go to your grocers meat department and they will sell you a ham bone cheap. The bone with just a small amount of meat on it will give your soup alot of flavor. If you choose, you can add pieces of ham to the soup also.
I usually take a couple days to make this soup. I soak my beans over night they first day. Then I put them on the stove for a while. Depending on how much time I have. You can eliminate this second step if you want. I just like my beans really tender for this soup.I started them in the crockpot and cooked them a while
that day and then cooked them all the next day.
About an hour or so before I was ready to serve the soup I took about 1 1/2 cups of the beans and put them in a food processor or blender to puree them a little and then added back to the pot. This thickened up the soup some. It has so much flavor. I sometimes add beef boulion to the beans while they are cooking.This is such a frugal soup. It is wonderful served with homemade buttermilk cornbread.
Crockpot Ham and Bean Soup
1 pound dried Navy beans, sorted and soaked overnight, drained
2 quarts water
1 meaty ham bone or chunks of ham
1 teaspoon salt, or to taste
1/2 teaspoon ground black pepper
3/4 cup chopped celery with leaves
1/2 cup chopped onion
Combine beans and water in a large saucepan. Bring to a
simmer; cook just until tender. Combine beans and liquid with remaining ingredients in slow cooker. Cover and cook on LOW for 8 to 10 hours.
Serves about8.

I love bean soup. It is so hearty and flavorful. I too enjoy serving cornbread with it. Sometimes a salad too. When I was growing up we often had baked beans as a meal. So nummy.

Oooops, forgot to add that I have never tried making bean soup in the crockpot. Hubby keeps telling me that I need to start using it again. This will be the recipe to start it running again. Thanks a bunch!
