I just got some corn meal (I live in Ireland so not an easy feat) and now need a recipe for corn bread. I've only made it from mixes before, so any suggestions for a recipe would be great!

Here is one I use. It is very good. Corn Bread * 1 cup self-rising flour * 1 cup cornmeal * 1/4 cup sugar * 1 cup milk * 2 eggs * 1/4 cup shortening DIRECTIONS 1. In a mixing bowl, combine dry ingredients Add the rest; beat for 1 minute. Pour into a greased 9-in. square baking pan. Bake at 425 degrees F for 20-25 minutes or until bread is golden brown and tests done. I also have a link to allrecipes.com it has lots of good recipes and I use the site often. The link is to the cornbread page. http://allrecipes.com/Recipes/Baking/Bread/Cornbread/Main.aspx Hope you enjoy your bread.

I have one suggestion. This I learned from when I was living in South Carolina, USA. Use buttermilk instead of plain milk, the flavor and texture is much better.
