Peanut Butter Refrigerator Cookies

Do you find yourself stopping at the market on the way home to purchase those store bought cookies for your child to take to school? There is a solution to this problem. Nothing could be simpler than making this wonderful cookie dough and store in the refrigerator till you are ready to bake them. This wonderful lemon cookie recipe makes 5-6 dozen of cookies which can be baked at different times. Enjoy
Peanut Butter Refrigerator Cookies
1 cup (2 sticks) butter or margarine, softened
1 cup granulate sugar
1 cup smooth peanut butter
2 eggs
2-1/2 cups all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
Combine margarine, sugar, peanut butter and eggs; blend well. Sift flour once before measuring and then sift with baking soda and salt. Shape dough into long rolls about 3-inches in diameter. Cover with waxed
paper. Chill thoroughly. When chilled,
slice & bake in 400 degrees oven
for 8 to 10 minutes.
Makes 5 to 6 dozen cookies.

You can make the cookies without chilling very long but the cookies will turn out best if the dough is chilled for a few minutes before bakeing.

Are there lemons in there? It looks really tasty though and you must be trying to make us all really fat with all this deliciousness!

It has been an age since I made peanut butter cookies. I didn't get around to making them this past holiday season.
