my family has gone for a vacation. i am forced bachelor for another two months. so I am planning to buy stuff so I can eat healthy for the fitness challenge and also want to widen my skyline with meals. What are you favorite healthy things to make? I don't think I know much that are totally healthy except some veggitarian fried or baked with spices watever. Can you recall more ideas?

This is a very simple recipe I whip up everytime there is no vegetable dish on the table. For this recipe you must have the following: cooking oil, garlic, cabbage, canned tuna in vegetable oil, salt and pepper. Brown the garlic a little followed by the tuna (including the oil in it) and then throw in the shredded cabbage. Stir a little and then put a dash of salt and pepper to taste. When I crave for spaghetti, I make a spaghetti with basil and tomatoes. Just have fresh tomatoes and some tomato sauce in handy plus fresh basil or basil paste will do. Boil the pasta and put some oil and salt (according to the package direction). Drain and set aside. Saute the fresh tomato with garlic and then add the basil and tomato sauce (for a tastier sauce, add some tuna). Pour this sauce over the boiled pasta and add some grated cheese (if you are not a strict vegetarian). As you can see I am not a good cook but I can manage to come up with meatless yet healthy dishes. I hope this helps. Hahaha!

If your family can afford a two month long vacation, you should be able to eat anything you please and have someone else cook it, too.

The best response that I can give you is to look up villageanne and request her to be your friend! She has more recipes and advice than anyone I have met here. Just go to my page and pick her out of my friends. She has a really cute little white puppy avatar. Good luck with the forced bachelorhood - 2 months is a long time. ~Donna

How about things like brown rice or tofu? You could easily make a stirfry with vegatables, and tofu and put it over brown rice. That is pretty healthy. One vegatable that I love is called spagetti squash. You can probably find it in your grocery store. You cut the squash in half and then bake it. Once it's soft you use a fork to scrape out the inside....it will come out in strands like spagetti! This stuff is a dieters dream. You can then put any type of sauces on it you like (from traditional tomato sauce, to olive oil, garlic and cheese). Beans are also really healthy and versatile. You can make black bean soup, or vegitarian chili (with beans, veggies and tofu). In fact, I think many of the above recipies can be made substituing tofu. However if you have never cooked with tofu before, be sure to drain it well, and pat it dry with paper towel. It carries a lot of moisture and can make you food too watery. Good Luck!
