I love muffins, they are not too sweet to enjoy at breakfast but are sweet enough to cure a sweet tooth. Muffins are great to make ahead of time to take on road trips because they are not messy when you eat them. They are great to eat as a nighttime snack to cure your hunger. They are great for adults and children alike. This is a wonderful recipe and I do hope you enjoy it. I like to make these to take when I go visit someone who has been ill. They are easy on the stomach. Strawberry Streusel Muffins 1-1/2 cups flour 1/2 cup sugar 2 tsp. baking powder 1/4 tsp. salt 1 egg, lightly beaten 1/2 cup butter, softened 1/2 cup milk 1 tsp. almond extract 1 cup fresh strawberries, sliced STREUSEL TOPPING: 1/2 cup chopped toasted almonds (you can also use pecans or walnuts) 1/2 cup sugar 1/2 cup flour 2 Tbs. butter, melted 1/8 tsp. almond extract Heat oven to 350. Line 12 muffin cups with paper liners. In a medium bowl, combine flour, sugar, baking powder, and salt. Make a well in the center. In a separate bowl, beat egg, butter, milk and extract. Add to dry ingredients all at once and stir until just combined, add sliced strawberries. Do not over-mix. Fill each cup 3/4 full with batter. To make topping, combine all ingredients into one bowl. Sprinkle evenly over top of each muffin. Bake 20-25 minutes.

How did I miss this one? We love to have muffins in the morning for our weekend breakfasts! Can you use frozen thawed berries in this recipe? I have a lot of frozen berries leftover from the summer.

I was wondering why there was not too many people commenting, I thought that nobody like muffins. I love muffins myself. I have a couple that I have posted lately that I am not getting many comments on. People must be tired of me.

OK, No fair, I am trying to LOSE weight. Maybe if I used low fat milk and margerine instead of butter, would that cut some of the calories? Because I must try this recipe.
