Black-Eyed Pea Fritters (Acarajé) Brazilian Recipe

Ingredients: 1 pound (2 cups) black-eyed peas 1/2 cup dried shrimp 1 medium onion, chopped salt dende (palm) oil How to Prepare: Soak the black-eyed peas overnight in cold water to cover. Drain. Rub off and discard the skins. Soak the shrimp in cold water to cover for 30 minutes. Put the peas, shrimp, and onion through the fine blade of a food grinder, or puree then in a blender or food processor. Season to taste with salt if necessary. The shrimp may be quite salty. Pour enough dende oil into a deep fryer or saucepan to fill it to a depth of 2 to 3 inches. When the oil is hot (365ºF), fry the mixture by the tablespoon, turning the fritters once, until they are golden. Drain on paper towels and serve at room temperature with Molho de Acarajé.

Now THAT sounds really good! Black eyed peas are one of my daughter's and my favorite foods. Oh! I can't hardly wait to try this, only, what is Dende Oil? other than Dende Oil I have all the ingredients to add this to our menu soon. to you serve it as a side dish, a snack, or a main entree?

This sounds like a good receipe as well; how do you make (or where could I buy) the Molho de Acaraje you say to serve it with? I am not sure what that is?
