what is your favourite chinese cusine?

Me being a chinese indian I've lost the actuall taste of chinese cusine. there are hardly few places that serve them. if u were to pick ur favourite chinese cusine, which one would they be?

My Fav is a Mix of American and Chinese Cusine, I love American Chopsey with chinese fried rice, this is lovely, have you tried this ?
