The best lasagne I ever made.

I make lasagne with half veal and half beef and also use cottage cheese as well as mozarella. I really liked the recipe, but the biggest problem I always had with lasagne was it never seemed to set properly and would fall apart on serving. Until one day when I made my lasagne for a friend who had to cancel our dinner until the following night. So, I put the lasagne into the freezer. When I cooked it the next day, I just added 15 minutes to the cooking time to allow for thawing and then let it sit for five minutes before serving. I could not believe it! It was the best lasagne I ever made. Somehow, freezing it made it set much better and it was perfect when I served it. Now I always make lasagne a day ahead of time and freeze it.

I have a very easy lasagne recipe that doesn't even require the noodle to be pre-cooked! Sarah's Easy Lasagne 9 uncooked lasagne noodles 1 small container cottage cheese 8 oz. shredded mozarella cheese 1 28-oz jar spaghetti sauce 1/4 c. grated parmesan cheese 1/2 lb. cooked hamburger meat basil and oregano In mixing bowl, mix the cheeses, reserving 4 oz grated mozzarella. Add a little basil and oregano to taste. Set aside. In 11 X 7 baking dish, spread 1 cup pasta sauce at the bottom of the dish. Top with 3 noodles. Add some cheese mixture, and then all of the hamburger. Start back with the noodles and repeat layers, using a little more sauce this time. Reserve the last of the sauce for the top layer. Bake at 375 for 45 minutes. Remove and add last bit of grated cheese and bake for an additional 15-20 minutes. Sprinkle a little more parmesan on after it comes out of the oven, if desired.

I've also noticed that using plain, uncooked noodles makes my lasagne "set up" more. I guess the tomato sauce I make is too liquid-y. I didn't know you could freeze a whole lasagne BEFORE cooking! that's such a great idea!! I'm starting a catering stint and that would be sooo easy to just drop off a few lasagnas and have my customer store them in his freezer. Thanks so much for the tip!! Also, I was just wondering, you use small curd cottage cheese for this recipe, right?

You know I am not picky with the curs size in this recipe, I usually buy whatever is on sale. I like ricotta too, and of course you can use that, but it is always more expensive, and to be honest, I have never even tried it!

I couldn't make a lasagna to save my life. My fav comes in an orange box with Staufers written across it.
