Hi I am looking for chili recipes. I have one I have made in the past but am looking for variation, "secrets," etc. If you have a good chili recipe, I would love you to post it here!

I hardly cook now ( not by choice). The recipes in the links are almost the same as the recipes in my cook books.

I love collecting recipes. I am sorry you are unable to cook....what a special thing to not be able to do anymore. Well, I do greatly appreciate you sharing your recipes.

princess07031980, This Chili Recipe is an authentic Texas Chili Recipe that has been used in my family for over 100 years. Try it. It's really easy. you will need: 1 lb of good quality ground beef 1 lb of chili meat 1 large sweet onion chopped 5-6 cloves garlic minced 2 TBSPS of your favorite chili powder 1 TBSP Cumin 2 tsps oregano either 2 cans of tomato sauce or 1 can chopped tomatoes water salt and pepper to taste jalapeno pepper (seeded and deveined) oil Add enough oil (about 1/4 cup) - I use olive oil, in a heavy skillet. In Texas, we all have cast iron skillets. Add the chopped onion and minced garlic and saute' until soft. (Don't burn the garlic - it makes it bitter). Add the meat and crumble it as you fry it. When the meat is browned drain off the excess fat. (I pour the mixture into a collander, drain it well and return the meat to the skillet. Now add the spices and mix well. Add the tomato sauce (2 small cans) and 2 small cans of water. (If you use a can of tomatoes add only 1 can of water). Mix and let simmer for about 30 minutes or so. Now add a chopped jalapeno. ( If you want the chili hot leave the seeds - that's where the heat is). Mix 2 tablespoons of flour (or masa) in 1/2 cup of water. Mix well and pour into the simmering chili mixture. This thickens the chili. There you have it. (We don't put beans in Chili in Texas)but you can add beans if you must. It won't be authentic Texas chili if you add beans. We eat it by itself with Texas Toast or French Bread, on Hot Dogs or we make Howling At The Moon Stew with it. We also put it between two pieces of bread lathered with mayonaisse and mustard and topped with onions and cheese. Yum Yum!!! Tell me if you like it.

Yum! Sounds very good but I have two questions regarding the recipe. First , what is chili meat? And two, what is masa, which can be in place of the flour? Other than that yes it sounds very easy and delicious-thank you!

Chili meat is beef that has been ground specifically or to make Chili. Ask the butcher in the meat market of your local store. He can show you. Chili meat gives Chili a wonderful texture. Masa is a flourlike substance used much like flour but has a much better texture. It's used to make home made flour tortillas and also used to thicken liquid. Flour is a good substitute if you can't find masa. Look in the Mexican or Spanish section in the grocery. You should find it there.

I had no idea that there was chili specialty ingredients! Thank you for taking the time to explain it to me. I will definitely look into get these things to try the new recipe. So do you make your own tortillas?

Chili is one of our absolute favorite dishes in our household. I tend to make the chili different each time as I do not want it to get boring over time. So I am always trying new sauces, spices, among other things to make it interesting. Instead of making it tiresome. I included two dishes that I make that are different from most chili's out there. I hope you find them to be rather useful & do enjoy the taste of them as well. Thanks for allowing me to share! xx "Skillet Chili Pasta." Ingredients are as follows: - 1 pound of ground beef - 1 medium onion, diced - 1 garlic clove, minced - 28 ounces of stewed tomatoes with the juice, but chopped - 1 cup of tomato juice - 14 ounces of kidney beans, with liquid - 2 tablespoons of chili powder - 1 cup of fusilli noodles, uncooked - 2 tablespoons of fresh sweet basil Directions are as follows: - Firstly scramble fry the ground beef, along with the onion & garlic in a skillet filled with oil. At least until the beef has been browned & the onion has become soft. Then drain the excess fat. - Then add the next 4 ingredients on the list & bring this to a boil. - Add the uncooked pasta, along with the basil & bring this to a boil. Then cover & simmer all of this for 15 minutes or at least until the pasta has become cooked. Then serve & ENJOY! xx "Chunky Chili." Ingredients are as follows: - 1 pound of top round or sirloin tip steak, cut it in to 2 cm cubes. - 1 onion, all chopped finely - 1 tablespoon of oil - 398 ml of canned kidney beans, with the liquid - canned mexican style stewed tomatoes, with the juice 2 x 398 ml - 1 green pepper, all chopped up - 3/4 of a cup of grain white rice, uncooked - 1 cup of water - 2 tablespoons of chili powder, or however much you desire - 1 tablespoon of cocoa powder (optional) - 1/2 of a teaspoon of salt Directions are as follows: - Firstly brown the ground beef along with the onion in the oil in a large oiled skillet. Then stir in the remaining ingredients & bring them all to a boil. - Cover all of this & simmer this for 1 hour or at least until the beef becomes tender & the rice is done. You can also boil the rice on the side, but combining all of this together makes it so much easier on a person. Some will like this dish, others won't. I found it different & unique. The other one is my favorite though. My other half likes this one more than I do. You can give it a shot though. ENJOY! xx

I add paprika, chilli powder, a tiny bit of brown sugar and some hot sauce.. it makes it sweet yet tangy- and both light and dark beans, and I drain my hamburger and also season it very well. I cook the hamburger and add it in last..

I like a little sweetness to my chili too. I prefer the dark red kidney beans in my recipe. What do you season your ground beef with?

Chili con Carne I SUBMITTED BY: Jeanne Jones "Great chili recipe for a very large crowd. Cook it in a 6 gallon steam jacketed kettle or a huge pot on the stove." INGREDIENTS 6 pounds dried pinto beans 3/8 cup salt 20 pounds lean ground beef 1 pound chopped onions 4 cloves garlic, minced 6 quarts canned peeled and diced tomatoes 2 quarts tomato paste 1 1/3 cups chili powder 3 tablespoons ground cumin 1 1/2 teaspoons ground black pepper DIRECTIONS Wash and sort pinto beans. Bring 3 gallons of water to boil in a 6 gallon pot. Pour in beans, return to a boil and cook 2 minutes. Remove from heat and let stand 1 hour. Stir in salt and simmer until tender, 90 minutes. Drain and set aside. Brown beef with onions and garlic over medium high heat in same pot or enormous skillet. Combine meat mixture, tomatoes, tomato paste, chili powder, cumin, pepper and cooked beans in 6 gallon pot; stir; cover and simmer 1 hour.

My mother raised me to measure ingredients with my eye and so I rarely use measuring utensils. But here is my chili recipe. I like to try different spices, but this is my best variation. 1 lb. ground beef 1 small onion 2 cans tomato sauce 1 can chili beans 1 can kidney beans chili powder garlic powder 1 jalepeno 1 can Rotel Brown hamburger with a little chili powder and garlic powder. Then when it is done I put all the other ingredients in a large sauce pan and let it cook on low hear for at least an hour. I think this helps in letting the flavors blend and the spiciness come out. Then I add shredded cheddar cheese to the top of the chili in bowls.

This recipe is fast, easy, vegetarian, and everyone I make it for loves it. 1 pkg Morning Star soy crumbles 1 2 Alarm Chili Kit 1 can light kidney beans 1 can dark kidney beans 1 can spicy kidney beans 1 -2 large cans of tomato sauce 2-3 small cans of diced tomatoes (I usually get the kind with onions and peppers) 1 Jar Chilis medium salsa 1 bunch of scallions First I cook the soy crumbles in a big chili pan on low. While that is heating I dice up the scallions and add those. Then I add the salsa, tomatoes, and beans. Finally I add the sauce and Chili kit (It has a bunch of little packets of chili powder, oregano, garlic, masala, etc - save the masala for last). I let cook several hours. Serve in bread bowls with shredded cheese on top. Warning this is spicy!

Here is my favorite Chili Recipe: Lori's Texas Chili Recipe 1 pound ground beef (or ground turkey, if you are trying to cut calories) 1 onion, shopped or 2 tbl spoons instant minced onion 1/2 teaspoon of garlic powder 1 to 1-1/2 tsp chili powder 2-1/1 tsp ground cumin 1 (28 oz) can crushed tomatoes 1 (6 oz) can tomato paste (you can add beans at this point, although I omit them) ** 1 (30 oz can chili beans Brown turkey in onion over medium-high heat, stirring to break up meat, until lightly browned, 5 to 10 minutes. Stir in all remaining ingredients. Heat to boiling. Reduce heat to medium-low and simmer, uncovered for 10 to 15 minutes. I serve this over corn bread with cheese sprinkled on top.

THe secret to any good chili . . . is to add a can of stewed tomatoes Italian style, THis simple addition can make a can of chili taste homemade...It's got the onions, celery, garlic. seasoning already added and it just makes the chile perfect,: I use hamb, stew meat, chili beans, kidney beans, Italian style stewed tomatoes, chili seasoning, and tomato sauce. Add whatever, but don't leave out the Italian Style tomatoes it makes the difference.
