One of my favorite dish and it's also a native delicacy here is Sinigang na Baka or Beef Casserole in Tamarind soup. I'm not sure how exactly it is made but here's an overview. Ingredients: 1 lb. beef or pork, cubed 3 tbsp. olive oil 3 to 4 cloves garlic, minced (to taste) 1 eggplant, sliced 2 cups baby carrots or diced regular carrots 1 md. vidalia onion, chopped into bite-size pieces 1 cup spinach or other green leafy vegetable 2 lg. tomatos, chopped into bite-size pieces 1 lemon, juice of 1 tbsp. white vinegar 3 to 4 cups water Cooked white rice Directions: Brown meat in olive oil and garlic. Pour water over meat and allow to simmer so that broth is created. Simmer, covered, until meat becomes slightly tender, about 30 minutes. Add remaining ingredients and simmer another 45 to 60 minutes. Serve, with plenty of broth, over white rice. That's one variation from foodgeeks.com. Enjoy.

Well, I read the comments and it seems that recipe there is the American version. The key ingredient is actually tamarind. Try changing vinegar to tamarind.

my fav is pea soup, the only difference with mine to most peoples is i add cu up potatoes, its makes it much thicker and it also makes it more of a meal.
