I really don't want to make a trip to the market today, but I would like some chocolate (or any flavor) pudding. Does anyone have a real good pudding recipe that they would like to share?

Egg Custard 1 cup evaporated milk, undiluted 1 cup water 4 large egg yolks 1/3 cup sugar 1/4 teaspoon salt 1/2 teaspoon vanilla extract fresh nutmeg or ground nutmeg In a medium saucepan, combine milk and water; heat to scalding. Beat egg yolks slightly; add sugar, salt and vanilla. Gradually add hot milk to eggs, stirring constantly. Divide into 4 custard cups and set in a pan of hot water. Bake at 325° for 50 minutes, or until tip of knife comes out clean when inserted in custard. Sprinkle with ground nutmeg or grate fresh nutmeg over top of each custard. Serve warm or cold. Serves 4.

I know how you feel. Sometimes you just don't want to leave your house to go to the grocery store for just one thing. I get like that sometimes so am always looking at ways to make things on my own without having to go & get pudding mixes, certain ingredients even, among other things. I enclosed two recipes below for pudding if you are at all interested. I thought I'd give you two different pudding recipes since someone already included a chocolate pudding recipe. I hope if you try these that you like them as much as we do in our household! . . Thanks for allowing me to share! xx "Vanilla Pudding." Ingredients are as follows: - 2 tablespoons of corn starch - 1/4 of a teaspoon of salt - 3/4 of a cup of sugar - 2 cups of milk - 2 slightly beaten beaten egg yolks or you could use 1 well beaten egg - 2 tablespoons of butter or margarine - 1 tablespoon of vanilla Directions are as follows: - Firstly in a sauce pan, blend the sugar, along with the cornstarch & salt. And then add the milk. Cook & stir this over medium heat. At least until thickened & bubbly. Then cook & stir for 2 minutes more. And remove from heat. - Stir the small amount of the hot mixture in to yolks or the beaten egg. And return to the hot mixture & stir for 2 minutes more. Then remove from the heat, add the butter & the vanilla. Allow to cool & set & then serve & enjoy! "Chocolate, Vanilla Swirl Pudding." Ingredients are as follows: - 1 cup of milk - 2 tablespoons of sugar - 1 tablespoon of corn starch - 1/2 of a teaspoon of vanilla - 2 tablespoons of beaten egg - 1 1/2 teaspoons of either butter or margarine - 2 tablespoons of semi-sweet chocolate chips Directions are as follows: - Firstly mix the sugar, along with the corn starch in a 4 cup microwavable measuring cup. Then stir in the milk & the egg product. Microwave this uncovered on high for 3 minutes or 30 seconds to 4 minutes. Then stir after 2 minutes, at least until the mixture begins to thicken & boil. Then stir in the butter, along with the vanilla. - Then stir in the chocolate chips in to 1 cup of the pudding until melted. Then layer the vanilla & chocolate puddings alternatively in glass dishes or swirl even in parfait glasses. Whatever you have on hand. Allow to cool & set in fridge. And serve & ENJOY! xx

Hope this one helps you! Good luck!! Chocolate Pudding Mix 2 1/2 cups instant nonfat dry milk 5 cups sugar 3 cups cornstarch 1 teaspoon salt 2 1/2 cups unsweetened cocoa Mix all ingredients together until they are well blended. To Make Pudding: Make sure you stir mix before using. Then measure out 2/3 cup of mix in a medium saucepan. Add 2 cups milk, one teaspoon vanilla and one tablespoon butter and cook over low heat stirring constantly until mixture comes to a boil. Continue cooking and stirring for one minute. Remove from heat; cool. May be placed in individual serving bowls then cooled.
