Crunchy Cracker - Topped Creamed Spinach

4 oz Philadelphia Neufchatel Cheese
1/3 cup milk
1/2 cup chopped red pepper
1/8 tsp. garlic powder
2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained
15 Premium saltine crackers, crushed
2 tbsp. butter, melted
Preheat oven to 350. Mix cheese, milk, peppers and garlic powder in bowl until blended. Stir in spinach.
Spoon into 1-quart baking dish or pie plate. Combine cracker crumbs and butter, sprinkle over spinach mixture.
Bake 25-30 minutes
Makes 6 servings - We use this as a snack for guests, enjoy!!

Easiest Creamed Spinach
A very easy low carb Creamed Spinach.
4 servings 20 min 10 min prep
10 ounces frozen chopped spinach
4 ounces cream cheese
garlic, to taste
parmesan cheese
Thaw and cook spinach til most water is gone.
Add cream cheese.
Add garlic to taste (either fresh or powder).
Stir over medium heat until cream cheese is melted.
Put parmesan over the top.
Cover and set off the heat until cheese melts.
Serve.
