Update on my honeycomb discussion

I have finally found a recipe that is tried and true for honeycomb!!! (sponge toffee) I had trouble when the other recipe just looked like syrupo. Here is the tested (and it works) recipe: 6 Tbs white sugar 2 tbs Golden Syrup (corn syrup) 2 teaspoons water 1 teaspoon bicarb soda Place sugar, golden syrup and water in a heavy saucepan and stir over a gentle heat until the sugar is dissolved Bring to the boil and boil for seven minutes Remove from the heat and quickly add the bicarbonate of soda At this point the mixture will froth Stir quickly and pour into a greased 28x18cm lamington tin As the mixture starts to cool, mark into pieces When cold, break into pieces. make sure you store in an air tight jar I'm going to make some more before the kids get home from school as I have just about eaten the whole batch myself..ooops.

Keep that up missy, you will be visiting the dentist soon lol, Congrads on the success of your Honeycomb, did it come out like the honeycomb in a voilet crumble (Australian brand name chocalate) or like a crunchie? & how much did this mixture make? My mouth is watering at the thought of yummy honeycomb lol, I'm not sure I would want to sacrifice one of my good pots to this. But will happily accept any donations you wish to send to me... lol :D

It turned out like violet crumble honeycomg. I suggest you put it in a small tin to cool thogu because it doesn't make much and the thicker peices were nicer. The kids weren't that excited over it, so I have to east it myself - what a pity... It washed out of the pot really easily so it wouldn't matter if you used a good one. I think the thicker bottomed pots are better.

This sounds interesting. When you say "bicarbonate of soda, I assume you mean what we call baking soda? I'm going to try it! As you said, this can be dangerous --those ingredients are always in the house! My mom used to make peanut brittle out of similar ingredients and peanuts in the microwave. Is this a hard candy or soft?

Yes bicarb is baking soda. It is a hard candy and it is now almost all gone!!
