Cream Of Broccoli Soup

4 cups chicken broth 1 (10 3/4-ounce) can cream of celery soup 1 (10-ounce) package frozen chopped broccoli 1/2 cup butter or margarine 1 medium onion, chopped 1/4 cup all-purpose flour 2 cups milk 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 cup shredded Cheddar cheese Mix broth and soup in a large saucepan. Bring to a boil over medium-high heat. Add broccoli; return to a boil and reduce heat. Simmer, covered, for 5 minutes or until broccoli is tender. Heat butter in a medium skillet over medium heat; add onion. Saute until tender, about 5 minutes. Add flour. Cook for 1 minute longer. Gradually stir milk into skillet. Cook, stirring continually, until thickened, about 5 minutes. Add salt and pepper; mix well. Stir milk mixture into broccoli mixture. Simmer over low heat, stirring frequently, for about 10 minutes. Ladle soup into a serving bowl. Top with Cheddar. serves 6

All of the recipes that I put on here, I have tried myself. A lot of thm are my own recipes or I have changed some from friends and relatives to my own taste.

I have never attempted to make my own cream of broccoli soup, but I would love to try a good recipe. My kids love both broccoli and soup-so this is sure to be a winner them too! Thanks :)

You are welcome. I have always loved cream of broccoli soup. It is hard to find a good one. I do love to experiment with my recipes.

I love cooking too, and love making homemade soups, especially on a cold winter night or a dreary rainy day. Soup is one of my favorites to make because you can almost never screw it up :). I have mde a Creamy Potato Soup before, but as I said, never broccoli. We eat soup even on warm nights in the spring, so it is not too late for my family to give it a try!

thanks for the lovely recipe here is another recipe for you Cream of Broccoli Soup 1ΒΌ hours 10 min prep Change to: servings US Metric 2 heads broccoli (cut up) 1/2 teaspoon chicken base (bouilion) 12 tablespoons butter 12 tablespoons flour salt & pepper 7 cups milk 1 cup evaporated milk 1 small onion, chopped 1 cup processed cheese, velveeta (optional) Simmer butter, chicken base, salt& pepper,flour and onions until brown, (called a Rue). Add both milks; cook on medium heat. Cook until rich and thickened. Stirring constantly. Add broccoli pieces. Turn heat to low and simmer for 1 hour. Add cheese if you wish, I prefer the cheese some don't. Delicious! hope you liked it
