Wow that really sounds good, do you buy pecan wood? so you can get the flavor? I would like to try that.

I have recently learned, that wood from fruit trees are excellent I ask this question 6 months ago and have done some intense research on the subject, peach, apple, plum, and any kind of nut trees are a excellent form of smoking food on a pit. Put your charcoal in there after it burns down, wrap the wood in foil, or put it in the bowl with the water in it, (it all depends on what kind of pit you have) and smoke away. We smoked some chicken with the apple wood , it was the bomb!! You know you get so sick of the same flavors all the time. No sauce, no salt & pepper needed on this tasty treat. Oh pecan wood/fruit wood can be found where ever the nuts/fruit land. Or purchased by the charcoal, they have mesquite chips too!!

great for barbequeing are pork chops, spareribs and even the meat cubes into skewers. we usually prepare it by overnite marinating with lemon juice, pepper, salt, soy sauce, little brown sugar and paprika. grilling it the next day with constant brushing of the marinade added with barbeque sauce and drops of olive oil. i'm not so particular of the charcoal or wood to use on grilling. i'm just concern that i can cook the meat well that is tender and full of flavor.

Oh my goodness, I love Ribs, pork shoulder, and beef brisket. All dry rubbed in my secret rub, and smoked with chunks of used white oak whiskey barrels! Yum, Yum! Low and slow.
