Recipes for Homemade Rolls/Bread??

Okay I love baking and trying new things in the kitchen, but no matter what recipe I use I can't get my rolls to turn out good. They are always really thick and dense-not light and fluffy like I want =) Do you have any tips or recipes to share?? I would love to be able to make homemade rolls for my family but can't seem to get it right! If you have any resipes/tips I would be grateful to hear them!! Thanks and I will rate everyone!

A couple tips to keep in mind when making breads and rolls-when you have to activate the yeast in warm water make sure it is warm enough to get it going. I have learned that warm in the kitchen often feels hot to the touch. Also measure flours exactly. Too much flour (or unsifted, if that is required) can make the bread very dense and it doesn't turn out as well. I am not the best at breads yet either, but I am learning!

I'm not very good with anything that calls for yeast either. I suggest Rhodes frozen bread dough you buy in the freezer section. Follow the directions for rolls instead of bread. They still taste like homemade.

I have 2 tricks that will work with any recipe. 1) Make sure the liquid is the right tempature. Too hot will kill the yeast, too cold will not active it. Teast the liquid on you inner arm near the elbow. If it is comfortabe there it is just right. 2) Put a little flour Maybe about a couple of tablespoons with your sugar and yeast in your liquid to get the yeast started. after you see a lot of action (foam and bubbles) 20 to 30 min it is time to put the rest of your bread recipe together as the recipe directions tell you to. This works for me every time and with most all yeast bread recipes

You should close your oven door gently as if you bang it shut it knocks the air out of the bread. Also let it rise twice, 30 mins the first time then kneed it again and let it double in size again before you but them into the oven. Hope this helps.

i have one my friend. try it: This basic bread recipe can be baked in loaves or as cinnamon rolls. INGREDIENTS: 3 packages yeast 3 Tablespoons sugar 1 1/2 cup warm water (not too hot) 1 1/2 cup butter 1 1/2 cup sugar OR 3/4 cup honey 1 1/2 cup hot milk 9 eggs 12 cups of flour (half wheat if just making bread and not cinnamon rolls) PREPARATION: In a small separate bowl, mix yeast, sugar and water. In large mixing bowl, mix the butter and sugar or honey; add hot milk and mix. Add the eggs and mix. Add about half the flour first, then add a little at a time until its to hard with the mixer. You can *mix* the rest of it in on the table while kneading. KNEAD for 8 minutes LET THE BREAD RISE until its doubled in size (about 2 hours) Punch it down and LET IT RISE again Shape it and put it in pans to bake LET IT RISE in the pans for a short while (30 minutes) Bake at 350* Times vary: Loaf of bread 15-25 minutes Round pan of cinnamon rolls 20-40 minutes Bake until bottom is slightly browned. - Babs
