I have a recipe website with lots of different recipes on many of them are very simple.
I think the easiest thing to cook is a stirfry and there are recipes for several different ones on the site.

Miso Soup (Japanese) a la luna_sea
- miso paste
- katsuo bushi (thin slice of fish)
- shoyu (japanese soy-sauce)
- tofu, chopped into small pieces
- green onions
- water
- salt
- sugar
1. boil water with katsuo bushi and then take only the water
2. add miso paste into water and stir gently
3. add green onions, tofu, salt, and water
4. ready to serve ^.^

What about Savoury Mince. It's easy, cheap and healthy.
INGREDIENTS
500gms of good quality mince meat
onions
garlic
peas, carrots, corn
gravox
packet of beef 2 minute noodles
RECIPE
Lightly fry onion. Add garlic. Add mince, and fry until brown.
add peas, corn and carrots. Fry for another 3 minutes.
Add precooked beef 2 minute noodles. Add 3 tspns of gravox.
Sti until all ingredients are mixed.
Stir.

Ingredients
2 tablespoons butter
2 tablespoons garlic-herb cream cheese
1/2 cup shredded smoked Gouda cheese
1/2 cup grated Parmesan
2 tablespoons fresh chopped parsley
8 eggs, beaten
1/2 cup shredded Cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 teaspoon black pepper
Directions
Melt butter in a large fry pan over low heat. Add eggs and cook slowly, stirring and scraping them frequently.
As the eggs thicken, add in the cream cheese and continue stirring until it melts into the eggs. Now add the remaining cheeses and continue to stir until the cheese melts and the eggs are firm and creamy. Season with the pepper and garnish with the parsley.
Serves 4

Take Pork Chops and drench them in Italian dressing. Cover and let sit in fridge over night. Grill them over med heat, occasionally brushing them down with the dressing each time you turn them. Alternatively, bake them at 350 for 2 hours or 425 for 1 hour, leaving them soaking in the dressing in an oven safe pan (of course.) With these baking, you can throw in some backed potatoes. Simply rinse potatoes cut a slit down the middle and wrap in foil. Throw in the oven next to pan of pork chop. Have fun with a veggie.

you can prepare a quick meal with pork chop slices dip with beaten egg w/ salt & pepper then dredge with italian flavored breadcrumbs then wrap with foil & bake for a about 10 minutes or just enough to cook the meat soft & moist . this is great with a cup of rice , saurkraut & a dip of worceshtershire sauce !
other simple dish that you can just saute onions & garlic with oilive oil , add chicken cubes , carrots , potato , mushroom , bell pepper & little condensed mushroom soup & just enough water. bring to boil til the chicken & vegetables are well done then serve immediately with garlic toast ! makes a great dinner .

If you love soups then you must try out this one :
200 grams (about 8 oz.) mixed vegetables (beans, carrots, potatoes) finely chopped.
1 medium onion(s) chopped
2 tablespoon(s) butter
1 tablespoon(s) plain flour (maida)
4 teacups milk
1 teacup(s) water
salt and pepper to taste
Boil the vegetables in water on medium heat for about 6 minutes or till tender and cooked.
In a pan, heat butter on medium level for a few seconds. Add the chopped onions and fry for about 3 minutes or till onions are transparent.
Add the flour and milk. Stir well. Now add the vegetables and water. Mix well and keep on medium heat for about 4 minutes.
Season with salt and pepper.
