Diabetic Whole Wheat Banana Muffins

1 cup all-purpose flour
1 cup whole wheat flour
1/4 cup toasted wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed very ripe bananas (about 3 large)
1/4 cup sugar
2 tablespoons granulated sugar substitute (such as sugar twin)
1/4 cup vegetable oil
1 egg, lightly beaten
cooking spray
Combine first 6 ingredients in a large bowl; make a well in center of mixture.
Combine banana and next 4 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened.
Spoon mixture into muffin pans coated with cooking spray (or paper cups), filling 2/3 full.
Bake at 350F for 20 minutes.
serve warm
yield: 16 muffins

You are welcome. I will be adding more diabetic recipes throughout the day. I shall find out tomorrow if I am one or not. Just waiting for the test results.

This looks like a great recipe for dessert or a snack.
Since I like banana and it doesn't take sugar, I will ask my mother to do it for me.

Wow Spiritwolf, I really enjoy my banana muffins they are delicious and I can eat them at any time e.g. morning tea, afternoon tea and when I have parties I often make them so thank you for your recipe. I am sure I will enjoy them as they are very good for us and I like them as they have potassium in the banana.
