Luau Coconut Pie

4 tbsp. butter, melted 2 eggs, beaten 1 tbsp. all purpose flour 3/4 cup sugar 1 can shredded coconut, sweetened 3.5 ozs 1 cup coconut milk 1 9 inch unbaked pie shell Preheat oven to 350 degrees. In a large bowl combine melted butter, eggs,flour,sugar,coconut,and milk. Pour into pie shell. Bake until firm about 45 to 60 minutes.

That sounds very tasty I will have to try it some day if you don't mind me saving your recipe.I like to mess around with different things in the kitchen and you can take a can of peaches and drain them and add brown sugar and top with canned biscuits to make a 5 minute cobbler for a quick sweet dessert.

I might try and do that. I love the flavor of coconut. I wonder what would happen if I were to use coconut oil in place of butter? Than I would be replacing one fat with a better one.

you could with a different flavor being the end result I do it all the time on recipes.I have to watch my fat intake.
