ok everyone i need help here. i've started the low carb diet a couple days ago and really want to incorporate this into a working lifestyle. i don't have a huge food budget and am looking for low carb recipe ideas that don't cost alot and don't take alot of time...any favorites out there, please share!!! i'm being real strict right now but in another week or so i'll be able to start adding carbs. i want to get to the point of eating 3 meals a day with 30 carbs each and 2 snacks with 15 carbs each. i've chosen this diet because it was suggested to me while i had gestational diabetes and i really want to ward off full blown diabetes with diet control. thank you in advance for your help.

When I was doing low-carb I used mushrooms to stretch the meat in meals & keep the costs down a bit. You'll need to research different mushrooms, because I am not sure the carb count is the same with all of them. But I used bellas & white salad mushrooms & if I remember correctly a half cup was 10 carb grams.
I also ate a lot of eggs, all sorts of omelets or scrambled in low-carb wraps.
Remember you need to drink lots of water,both to support your pregnancy & to flush the higher levels of protein you're bound to have from a low carb diet. Also remember that the net carb count is the # of carb grams minus the fiber content. Things like oatmeal are high in carbs, but also high in fiber.
For managing my diabetes I find avoiding "white" carbs- white bread, refined sugar, white rice, pasta etc. works for me. High fiber, whole grain foods doesn't seem to have a negative effect on my blood sugar.

what about the whole wheat pastas? are they ok?
i'm no longer pregnant but definately want to keep my health in mind, it's hard changing eating habits. i've always been one of those shop in the freezer section for meals people. starting from scratch is just real tricky and any help is greatly appreciated. how does one replace all those "white carbs" that they are accustomed to eating? i know i'm full of questions.

Hi I'm Toya What's cheap to buy? Salad, vegetables, bean curd, tofu. You could make sweet and sour tofu or stir fries. Tofu and seaweed salad, you buy the seaweed dried in packs and then add water and it goes like seaweed strips. You could do bean curd and quorn escalopes, You could do mashed black beans instead of potatoes, you just buy the beans in cans. or bean and quorn spaghetti bolognese, just buy the wheat and gluten free spaghetti, or white beans with tarragon, mushrooms and tomatoes, just buy the white beans in a can, tomatoes in a can and serve with salad or brown rice. Congrats on getting started. I agree that the best source of info is lowcarbfriends.com. You can find all the info you want there, and it's really easy to use. They also have discussion boards where you can ask specific questions, and get really good advice. You can also do a search there for "low carb cheapskate" and get TONS of info on doing low carb on a budget. It's really the best place there is! Enjoy the way of life and the way you feel with it! :)

I did lowcarb. The best resource for me was lowcarbfriends.com. Trust me you will love that site. If you need support let me know. I've been there. I'm planning on doing it again to lose the remaining 20 pounds.
