A recipe for leeks?

March 21, 2007 1:40pm CST
I have half a dozen leeks in the fridge which need doing something with, but I've run out of ideas. I would usually use them in a soup, but I'm wondering if there is a supper recipe I can use them for? What would you do with 6 spare leeks? Ideas please!

I think because of them beng tough they must be cooked so any where you use onions in a cooked meal, another thought is to dehydrate them, just slice very thin lay on a cookie sheet, and put in an oven that is about 70 degrees, to get it to 70 degrees turn you oven on low and heat up put sliced leeks in and turn off heat they should dry out very nicely, or mix up on sheet and heat oven again and let them sit one more time, after they are completely dry and cold put in a zip lock bag and keep in cupboard until you need onions for cooked meal. Hope this helps

I've never tried dehydrating vegetables before, only fruit like apples. I often freeze vegetables though to use again later. Thanks for the idea. I'm not sure you can use leeks in exactly the same way as onions, although there would be many recipe where you could substitute. They taste quite different to me.

i would saute the leeks with any meat or chicken. That tastes amazing.try this way.. put olive oil as desired and fry the big medium sized chicken or meat until it little tender. Now add the cut leaks to that saute them till tender.Add salt, pepper, dry sage or parsley according to your wish. Its very easy and simple.

Yes, leeks go really well with salmon. I've done this exactly with leeks and salmon in foil - I also add some carrot shreds in my version. It also works en croute (in pastry). Less healthy when you use the pastry of course.
