Rainbow Trout in a Potato Crust Recipe

As I am not an expert in the kitchen and like fish I thought this recipe sounded easy enough even for me. For all you experts could another fish be substituted for the trout?
This recipe serves: 4
Preparation time: 10 minutes
Cooking time: 5 minutes
Ingredients
4 rainbow trout fillets
salt to taste
white pepper to taste
2 tablespoons vegetable oil, plus a little extra
8 small new red potatoes
2 tablespoons finely chopped, fresh parsley
lemon wedges
Cooking Instructions
1. Remove the skin from the fillets. Lay the fillets on individual squares of waxed paper and sprinkle with salt and white pepper.
2. Slice the unpeeled potatoes about 1/16" thick and lay them in an overlapping "fish scale" pattern on the surface of the fillets.
3. Coat a 10" skillet or sauté pan with oil and heat over medium-high heat. Gently lift each fillet by sliding one hand underneath the waxed paper and carefully flipping the fillet over into the pan (potato side down), being careful not to splash the hot oil. Add more oil to the pan so that the potato "scales" are immersed. Cook for 3 minutes, or until the edges of the potatoes begin to turn golden brown. Using a perforated spatula, gently turn the fillets over and cook 1 minute more.
To Serve: Remove the fillets from the pan and place on warm serving plates. Sprinkle with the parsley and garnish with the lemon wedges. Serve immediately.

This sounds so good.
I live in the best fishing area of North America and my boyfriend is native so fish is almost a stable in my house. I've discovered many different ways to cook it up but am always interested in learning new ones. I think this is one that I'm definatly going to try this year.

Wow, and you say you are not an expert in the kitchen. Well, as a fellow non expert I am certainly going to give this a try. However, as I don't like trout, I will replace it with either salmon or fresh cod. I can't wait to try it at the weekend and I can almost smell it already. Great stuff!

Now this would be great, as every ingredient in this recipe my husband can have, except the lemon. I could just leave that out, unless there is a substitute?
I would use garfish or whiting.

Congrats on putting out this "unusual" recipe with excellant info and directionjs..The only fish I will eat is the ones I catch.I do alot of trout fishing but try to catch-and-release.If,I have to keep it,then I will cook it up while fresh.I am not sure if I will try the recipe,but it is a good option for me.
