can someone post the best recipe for carbonara...id like to make one for my adopted daughters b-day...thanks!

I love pasta carbonara! I enclosed two recipes below of the ones that have been tried & tested. I know that when I have prepared both recipes that both me & my other half just loved them immediately! I hope if you end up trying one of these recipes that you will end up enjoying this dish.. As will everyone else will to. As it is so rich, yet full of flavor all at the same time! . . Thanks for allowing me to share! xx "Spaghetti Carbonara." Ingredients are as follows: - 1 lb of spaghetti - 1 cup of heavy cream - 1 tablespoon of oil - 10 ounces of pancetta, diced - 4 large egg yolks - 2 cups of grated parmesan cheese - 1/4 of a teaspoon of black pepper - 1 teaspoon of salt Directions are as follows: - First bring a large pot of water to a boil. Then in a medium skillet over medium heat take the olive oil & cook the pancetta. Cook the pancetta until browned for 4 - 5 minutes. Remove this from the skillet & then keep warm. - Then cook the spaghetti in the boiling water as the package directions states. - While the spaghetti is cooking, take the heavy whipping cream & whisk it with the egg yolks, the parmesan cheese, along with the salt & pepper in a medium - large bowl. At least until well combined - Then once pasta is cooked, drain & return to pot or to a sauce pan. And immediately stir in the egg/cheese mixture. At least until well combined. Then add the warm pancetta & the fat from the pan. And toss very well. - If you find that the cream is to thick, just use additional cream to thin it out. Then serve with more parmesan cheese if desired. ENJOY this delicious meal! xx "Deluxe Carbonara." Ingredients are as follows: - 1 package of spaghetti - 1 garlic clove, finely chopped - 8 - 9 slices of bacon, diced in to small pieces - 2 cups of diced up cooked chicken - 1/2 of a cup of grated parmesan cheese - 1 or 1 1/2 cups of heavy whipping cream - 1/2 of a cup of 1 medium onion diced Directions are as follows: - First cook your spaghetti in a large pot. Cook as directed on package, then drain. - While you have the spaghetti cooking, dice up your bacon & fry it on low - medium heat for 10 minutes until crisp. Make sure to stir frequently. And then remove the bacon from the pan with a splotted spoon. And then drain the excess fat from the saucepan, but reserve 1 tablespoon. - Also make sure to have your chicken cooked as well. As you will need to add it later on as well. - Then cook both the onion & the garlic in the bacon fat over medium heat for 3 - 4 minutes, at least until the onion becomes tender. Then stir in your spaghetti, along with your chicken, parmesan cheese & of course the heavy whipping cream. Then cook all of this, stirring occasionally, until heated through. Then toss this with the bacon & serve & ENJOY this delicious dish! xx
