I love scones. I love to make them because they are so quick and easy to make while they are tasty to share. They are so flavorful yet so light and airy. These Scones have apricots and White chocolate in them. They are so yummy. Teens just love them! They will be great to have on hand when your teens have friends over for a night of movies. You will be a hero with your cooking. Hope you enjoy them. I have also used dried cranberries in place of the apricots. YUMMY
Apricot, White Chocolate and Walnut Scones
2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4cup unsalted butter (cold)
1/2 cup heavy cream
1 large egg
1 1/2 teaspoons vanilla extract
6 ounces white chocolate cut into 1/2" chunks
1 cup coarsely broken walnuts freshly toasted is best but not a must
1 cup finely chopped dried apricots
Preheat the oven to 375. In a large bowl, stir together the
flour, sugar, baking powder and salt. Distribute the butter over the flour mixture.
Cut in the butter until the mixture resembles coarse crumbs. In a small bowl, stir together the
cream, egg and vanilla. Add the cream mixture to the flour mixture and knead until well combined. Knead in the white chocolate, walnuts and apricots.
With lightly floured hands, pat the dough out into a 9" circle in the center of an ungreased baking sheet. With a serrated knife, cut the circle into 8 wedges. Bake for 15 to 20 minutes or until the top is lightly browned.
Remove the baking sheet to a wire rack to cool for 5 minutes. Transfer scones to the wire rack to cool. Recut into wedges if necessary. Serve warm or cool completely and store in an airtight container. They will dry out quickly if they are not in an airtight container.
To make scone hearts, pat the dough to about 5/8 inch thickness with lightly floured hands. Using a 3 1/4" heart-shaped cookie cutter, cut the dough into hearts. Gather the scraps of dough together and repeat until all the dough has been used to make the hearts. Put the hearts on a baking sheet and bake as above. Makes about 9 hearts.

My favorite is raisin scones. They are so delicious. My mother loves them. When I make them, I make them for several people and they have the highest regards for them. I got the recipe from a bed&breakfast online. There is nothing better to eat with tea.

These do sound good. I will have to give them a try. I think I might try some different shapes though. I just bought a new set of cookie cutters. It has some Easter shapes in it. I don't remember what shapes it has, but any Spring or Easter shape would be good. I see you have substituted cranberries for the apricots. I wonder what other fruits might be good. I was thinking I might like to make a variety. Maybe I could make apricot eggs, cranberry chicks, etc. What do you think?

We have not done many scones. Biscuits or bread products were more for us. These are indeed versatile enough and before I believe I got a scone recipe from you or perhaps another here and will have to try them definitely. I think I would love to be a neighbor of yours. ^_^

I have never made them but I do love them. The local coffee shoppe makes a butterscotch toffee one that is wonderful. I look forward to going there to see what they have new.They always have some new flavor.
This recipe sounds great I just may have to try my own.
