Have You Ever Made Chicken Creole in the Crock Pot?

I just put tomorrows lunch in the crock pot to cook over night. We have lunch at about 1:00 and it will be done perfectly and cooled to eat right on time. I put the following into the crock pot. I hope my recipe is understandable. I just estimate my ingredients and this is what I used but I will taste it before I serve it and my need to add something else. So just adjust it to your families tastes.I usually brown my chicken on all sides before I put it in the crock pot but tonight I did not. I have made it both ways with good results. This is also great served over french fries. I know that sounds weird but it is very good. I hope you enjoy it. Crock Pot Chicken Creole 3 lbs chicken thighs or breasts skinned 1 cup celery diced 1 red bell pepper sliced 1 green bell pepper sliced 1 medium onion sliced 1 can sliced mushrooms 1 can tomatoes 1 tsp. garlic powder 1 tsp of sugar or 3 pkg sugar substitute 1 tsp. Cajun seasoning 1/2 tsp. paprika salt & Black and white pepper to taste hot sauce to taste I dont use too much as I dont like mine hot. 2 cups minute rice fully cooked Put the chicken in bottom of crock pot. Then Combine remaining ingredients (except rice) & add to crock pot. Cook on high 4 to 5 hours or on low 7-8 hours. Cook your rice according to package direction. Spoon the Creole mixture over hot cooked rice.

Great, almost midnight and you got me drooling.,,and I can't find my bib. We are both home from work on Sunday...this sounds like something I can throw into the crockpot on Saturday night and we can have on Sunday. Once again thanks.

It sounds delicious. I wish I could cook it but I have a small crock pot and can't fit all the ingredients in it.LOL I guess I'll have to buy a larger crock pot.

oh man! okay tomorrow is Salmon patties, then I guess this one is for Thursday. I bought some chicken thighs with plans to make Adobo, but I reckon I will give this one a try instead....I have already had adobo before :) What are the ingredients in your cajun spice mix? perhaps I can devise a substitute out individual spices...

This sounds wonderful. I'm sure my hubby would love it. I on the other hand am way too picky to eat half the stuff in this. I might make a half batch for hubby though cause I know he will enjoy it. Thanks for sharing.

Thanks for the recipe. I have found that it is also cheaper to make things in the crockpot as well. My husband and I are pinching pennies so every little thing helps. Thanks again for the recipe I really appreciate it.

Crock pot receipes save my life at certain times of the year. I have 2 18 quart crocks and 2 of the smaller ones. I also rely heavily on make ahead casseroles during calving, seeding, and harvesting. This will be on my list of things to try. It looks like an easy one to double.

That is the only way I have made chicken creole, same thing for gumbo and jambalaya (did I spell that right). The crockpot is the best invention since the bread maker (( I bet you thought I was going to say sliced bread, but home made bread is so much better).

I've been making Chicken Creole for 28 years - since the first time I had Shrimp Creole in New Orleans but with the cost of shrimp, modified it to use chicken instead. I've never thought of doing it in the crock pot, what a great idea. I'm not much of a cooker these days but love things I can through in the pot and we can eat on later as we want. Thanks bunches for the idea.

I haven't made this, and I don't even have a crock pot! If I did I think I would like to try this. However, since I know where my crock pot is...I'll copy this recipe and give it to the youngest daughter, who not only loves to try new chicken recipes, but swiped the crock pot when she bought her house!!
