Do you love Vidalia onions?

I love when the Vidalia onions come out in the produce sections! These onions are so sweet I even make a casserole, similar to a potato casserole, as a side dish to enjoy. I actually have a couple versions I make. Do you use Vidalias for anything special? Share your recipe please!!!! Here's mine: Vidalia Onion Casserole INGREDIENTS: 3 cups chopped Vidalia onions, about 3 large onions 1/2 teaspoon dried leaf thyme 1 teaspoon dried parsley flakes or 1 tablespoon fresh chopped parsley dash crumbled rosemary 2 tablespoons butter 2 tablespoons flour 1 1/2 cups milk 1 cup plain soft bread crumbs, divided 1 tablespoon butter, melted 2 eggs, separated 1/2 teaspoon salt 1/8 teaspoon pepper dash ground nutmeg, optional fresh chopped parsley, optional PREPARATION: Butter a 1 1/2-quart casserole. Heat oven to 350° F. Beat egg whites in a medium bowl (not plastic) until stiff peaks form; set aside. Lightly beat the egg yolks in a small bowl; set aside. In a saucepan, combine the chopped onions, thyme, 1 teaspoon parsley flakes or 1 tablespoon fresh chopped parsley, and rosemary. Add about 1 cup water; cover and bring to a boil. Reduce heat and continue boiling until onions are tender; drain well. In a medium saucepan, melt butter; stir in flour until well blended. Gradually add milk, stirring constantly. Cook over medium-low heat, stirring constantly, until thickened. Add the drained onions and 1/2 cup of the soft bread crumbs. Quickly stir in the slightly beaten egg yolks; add salt, pepper, and a dash of nutmeg, if desired. Fold in the stiffly beaten egg whites until well incorporated. Turn into prepared casserole. Toss remaining 1/2 cup bread crumbs with the melted butter and fresh chopped parsley, if using. Sprinkle over the onion mixture. Bake for about 40 to 50 minutes, or until a knife inserted in center comes out clean. Serves 6.

Vidalias are awesome. I'm also partial to a local offering, the Florida Sweet Onion. They have the green tops attached, and you can use them like leeks. Very yummy.

I've never heard of the Florida Sweet. I'll have to look for those locally, perhaps they ship them up? Leeks, while tasty, always seem to give me the burp effect.

Sounds great. But I'm the only one in the house who will eat onions, so I'd be eating the same side dish for weeks! Maybe I'll try it as a covered dish to take to a potluck. That way I'll get to enjoy it and not have to throw any of it out. Thanks.

As I live close to Vidalia we always get plenty of the onions. Baked is one of my favorites here is the recipe: Baked Vidalia Onions INGREDIENTS: 4 large Vidalia onions 1/4 cup cold butter, cut into pieces 1 teaspoon salt 1/4 teaspoon black pepper 1 cup shredded (fresh) Parmesan cheese PREPARATION: Peel onions, leaving roots intact. Cut each onion into eighths, cutting just to the root, but not through. Place each onion on a lightly greased square of foil. Press butter into onions, then sprinkle with salt, pepper, and cheese. Wrap in the foil then arrange in a 13 x 9-inch baking pan. Bake at 400 for about 1 hour. Serves 4.

thanx for the recipe my friend , i havent tried it before but now it seems to be a tasty dish. i'll definately try and i enjoy making new things because my family also like innovative ideas in cooking and variety in eating .

I love vadalia onions. I live in Georgia so we use them as much as possible. I love to cut one up and fry with potatoes. They are nice and sweet. I also find that where other onions upset my system vadalias don't. Thank you for the recipe.

I have two recipes that we just love. 4 large vidalia onions,peeled and sliced 1/8' 4 medium apples,peeled and sliced 1/8' 6 slices of cooked bacon ,crumbled. reserve fat 2 slices of white bread cubed 3/4 c. chicken broth Layer vidalia onions,apples, and bacon in a 2 quart casserole dish.Pour broth into the bottom of casserole dish. Cover and bake for 45 minutes at 350 degrees.While that is baking saute bread cubes in 2 tbsp.of baking fat.Uncover casserole and dot with bread cubes.Bake for additional 15 minutes. This next one you microwave only takes minutes. Remove skins from 4 vidalia onions.Slice the bottoms off so that they are flat. Slice 1/4 to 1/2 section from the top centerof the vidalia onions to make a little well. Place in a microwave dish.Pour 1 tsp.of worcestershire sauce into each vidalia onion . Top with 1/4 tsp margarine. Cover and microwave for 6 minutes at 100% power.Turn half way through cooking time.

That sounds really yummy as i really like onions, but i dont know that i've ever seen the type of onion you are talking about, i'm not even sure i can pronounce it! lol. I realy like those little pickled onions that come in the jar. mm i think i will have to buy some of those when i go grocery shopping tommorrow. Why do i always answer food discussions!!?? they always make me so hungry!!

I love Vidalia onions. They are sweeter and miler than all other onions. My favorite way to use hem is raw in things like salads. I also (call me weird) like onion sandwiches. White bread, Vildalia onion and Miracle Whip. Yummmy

I love the idea of the Vidalia onions, but they never sell them where I live and so I can never buy some to try out. I guess the idea of sweet onions never caught on here :(

This sounds so yummy. It really is too bad my husband hates onions, but maybe the kids will like it. Personally, I love to just slice a Vidalia in half and toss it on the grill with whatever else I am making. Or slice them up and eat them raw in salads. Lived in Vidalia for a couple years as a kid and we would grab them out of the garden and eat them like apples. After we moved and before they were available further north, my parents would have a case shipped to us from friends who still lived there.

Oh this sounds really good! I also love it when the Vidalia onions come out. My favorite thing to do with them is to put them on sandwiches or in my salsa. Thanks so much for the recipe! I have never tried something like this and I look forward to trying it as soon as I buy some Vidalia onions!

I remember one year being so angry that they were in short supply and cost a lot more then usual. I refused to buy them until I couldn't stand it any longer. I realized I was being pretty stupid when I refused to buy onions, good for you, but would pay as much as I do for ice cream... not so great for the hips! LOL

Hey,thanks so much for the recipe. I do love Vidalia onions. Did you know that they were named Georgia's official state vegetable in 1990? There is also a Vidalia museum located at 100 Vidalia Sweet Onions Street in Vidalia, Georgia. I learned all of this on the official website: http://www.vidaliaonion.org/index.aspx. Check it out if you haven't done so already. They've got lots of delicious-sounding recipes.

I didn't know they became Georgia's official state veggie but I can see why they are! LOL I did know there was a museum though and a ton of cookbooks dedicated to these sweet veggies. Thanks for the link! I will definitely have to check out the recipes there!

Sounds like it would be really good..I love vidalia onions, but I usually bake them or roast them on the grill. I will definately try this casserole when we get the onions here..:}
