Penne with Greens and White Beans Beans and greens -- with plenty of garlic -- are a classic combination in Italian cooking. And with the red bell pepper, this easy vegetarian pasta dish features the colors of the Italian flag! Credit: Slim-Fast Servings: 4 Ingredients: 4 teaspoons olive oil 4 cloves garlic, peeled and minced 1 medium red bell pepper, cored, seeded and diced 2 pounds fresh greens (spinach, kale, Swiss chard or escarole), washed thoroughly but not dried, stems removed, and torn into bite-size pieces 4 teaspoons balsamic vinegar 1/4 cup vegetable stock 2 (15-ounce) cans cannellini or other white beans, drained 8 ounces penne (or substitute other tubular pasta such as rotini or ziti) 1/4 cup grated Parmesan cheese Directions: Heat the oil in a large nonstick skillet over medium-high heat. Add the garlic and pepper, and saute 2 minutes. Stir in the greens, vinegar and stock, cover the pan and cook until the greens are wilted and tender but still bright green, 5 to 7 minutes. Gently stir the beans into the greens mixture, set aside and keep warm until the pasta is ready. Meanwhile, cook the pasta according to the package directions, until al dente. Drain. Add the pasta to the greens-beans mixture and gently mix. Top each serving with 1 tablespoon of grated Parmesan.

Hello Aissha - i'm a vegetarian too. I have sheep and chickens in my garden and I cannot bear the thought of eating meat when I can see it wandering around outside. My husband however, loves meat. But he does eat vegetarian meals occasionally. The only thing is to make sure you get enough iron in your diet as vegetarians can suffer from a lack of this - so vitamin pills are recommended just to be sure. lol

I'm a maratha by caste , grown up in family where non-vegetarian food is considered as vegetarian only. Infact we cut a goat as soon as child takes birth and in my family they cut a goat daily till the child gets his/her name . ( I know it's very weird and won't be following family rituals anymore ) I left non-vegetarian food when I was 12 as my mother is a vegtarian . Then I started again when I was 17 and I left non-vegetarian food this 1st of january . I like vegetarian food as it has more options and good to eat without any hesitation . ( Truth is my wife is a jain by caste and I had to leave because of her )

I am a vegan. I wish I lived in a community of people who were all vegetarian as I think that would make it easier for me. I do find it difficult when I am visiting family or friends and they are eating meat. I think it is great to be vegetarian. Good for you.

I eat meat, generally chicken, but always oved vegetables. My hubby is a meat and potatoes kinda guy, as are my kids. I have found myself contemplating a vegetarian diet more and more recently, mostly due to things I have been reading about meat consumption and our "carbon footprint." I guess that would mean I'd be cooking two meals for my family, as I don't see them jumping on board with the idea of being vegetarian.

Vegetarian or Non-Vegetarian or Eggetarian? A question that the people in the world are still debating on. Aish, i was born into a family that is non vegetarian. I was born on the south western coast of india, where fish is one of the staple foods. strictly speaking... i think it is just the matter of choice that one is a veg or a non veg. taste and smell matters too. and if you can relish both the taste and smell, then eating that food would be fun. about veg, well, it is the best form of food available. and given a choice, i will alwayz try vegetarian food. reason: it is very easy to digest veg food and i relish the taste of Veg Food.

I am non-vegetarian. I love eating chicken 6 days a week:P. Except on saturday i will eat on any day. Coming to vegetarian, i love vegetarian food. Any green leaves curry or dal and while in parties i prefer most of the vegetarian dishes than the non veg dishes. You know what Vegetarians are more stronger than non vegetarians. So you a brahmin ?
