As if life doesn't give us enough problems, I have been diagnosed with Diabetes.

I just found out that I have diabetes and I am having to go through many changes in my life. I have to admit that some of these changes can be good. If I really buckle down I can beat this! Do you have any great recipes for one or two people? I am single and I enjoy cooking! Share some of those recipes and ideas.........

I don't have any specific recipes to share but I do make lots of things for my diabetic husband taht I also enjoy myself. We have baked chicken and fresh steamed veggies quite frequently as this is a favorite to both of us and really quite satisfying. I like to make homemade soups because again they are satisfying and so much better for you than the canned varieties. Just add whatever veggies you enjoy to soup stock. You can either buy soup stock that is low in sodium (add other spices to give it zest) or you can make your own stock by boilng chicken or beef. There are lots of spices other than salt that add great flavors to foods including soups. You will find that by changing things around just a little bit you will really be able to comply with the diet you are to follow. Think of healthier alternatives and remember portion sizes are really important. FOr example, instead of 1 C plain white rice, you can have 1/2 C brown rice mixed with chopped broccoli (to make 1 C) and you still get the rice and you still look like you have a large portion. We also eat lots of salad at our house. Salad is filling and healthy and if you eat it prior to the meal, you will want less of the other foods being served so that is good. Just beware of salad dressings, Some are more sugar friendly than others!

Thank you for that helpful information! I enjoy cooking and since I live by myself I tend to end up with leftovers. A neighbor just introduced me to a product that is used along with a vegan diet to cleanse the body of toxins. It is used in distilled water and I drink that twice a day before meals. I am impressed with the effect it has on my energy level and the way I am able to do more. I also started making my own bread again. It is with spelt flour and I control what goes into it. I do not miss the meat and I enjoy the flavor of nut butters on the bread and on celery. I feel so much better knowing that I have the say on how I will get through this phase in my life. I hope to see that excess weight out of my life in the next two months. Wish me luck!

Having diabetes is rather common and not a big deal today. My mum is a diabetic. What is important is to control the level of sugar such that it does not goes up too high as this diseaase can cause lots of other diseases like eye and kidneys.
Your doctor would have advised the kinds of foods to eat and what not to eat. For a start, avoid oily and fried stuffs. Go for greens, steamed, or boiled. It would be boring at first, but once get used to it, it will be allright and especially happy to see the glucose level back to normal.
Life can still be the same even after you have been diagnosed with diabetes. Just need to be careful of the food intake.
